Chicken Salad with Mango Salsa

This is one of my personal favorite salads! I think this is going to become one of your go tos too! This Mango Chicken Salad comes together quickly and is always a hit. Save your $$$ from eating out and make this at home!

The chicken is seasoned perfectly with a simple taco seasoning that really adds a whole lot flavor to this salad. 

This salad is also ideal for meal planning, cook up a bunch of chicken at the beginning of the week and use it for lunches, chicken tacos and even quesadillas.

Steps to make this simple Mango Salsa Chicken Salad

The first step to make this salad is to start by cooking the chicken. The chicken gets seasoned with a simple taco seasoning and then cooked in a skillet over medium heat until it is cooked through. Chicken is done when it reaches an internal temperature of 165ºF. 

While the chicken is cooking, prepare the Mango Salsa. Chop up the mango, tomatoes, jalapeno, onion, red pepper and cilantro. Toss in a bowl and squeeze lime juice all over! Sprinkle with a little salt and let sit until you are ready to serve. 

Rinse and chop the lettuce or spinach that will be filling the bowl of your Chicken Salad.

Now that your mango salsa is done and the chicken is cooked, you can go ahead and start assembling your salad. 

This is where you get to make it your own! I like to start with a big bowl of chopped, crisp Romaine lettuce. Top it with sliced avocados, chicken, black beans, mango salsa, lime wedges and creamy avocado cilantro lime dressing. 

All of the elements of this salad are so good for you, so feel free to indulge!

What you will need for this Chicken and Mango Salsa Salad:

  • chicken: I like to use boneless, skinless chicken breasts. You could also use chicken thighs if you prefer. For this recipe I plan 1/2 chicken breasts per person. 
  • black beans: or any other bean that you prefer
  • avocado
  • lettuce: I like to use romaine, spinach, leafy greens or even Iceberg

Taco Seasoning for Chicken: I like to make a big batch of this and keep in a bottle for future use as well.

  • cumin

Mango Salsa:

  • mango
  • red onion
  • roma tomato
  • red pepper
  • lime
  • cilantro 
  • salt

Avocado Cilantro Lime Dressing:

  • avocado
  • lime juice
  • cilantro
  • greek yogurt
  • jalapeno
  • olive oil
  • salt
  • water

Can I make this Chicken Salad ahead?

If you are making this for meal planning, you can definitely make this ahead. Cook the chicken and prepare the mango salsa. Keep in air tight containers in the refrigerator for up to 4 days.

Ingredients

  • 3 chicken breasts, boneless skinless
  • 1 tbsp olive oil
  • 2 romaine lettuce heads, chopped
  • 3 avocados, sliced
  • 1 lime, sliced into wedges
  • 1 15 oz can of black beans
  • 1 cup mango salsa recipe

Taco Seasoning for Chicken

  • 2 tbsp chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne
  • 1 tsp oregano

Avocado Cilantro Lime Dressing

  • 1/2 avocado
  • 1/2 jalapeno, seeds and ribs removed
  • 1 tsp olive oil
  • 2-3 tbsp cilantro, chopped
  • 1/4 cup greek yogurt
  • 2 tsp water
  • 2 tsp lime juice
  • 1/2 tsp salt

Instructions

  • In a small bowl combine the ingredients for the taco seasoning. Season the chicken on both sides with the taco seasoning.
  • In a skillet over medium heat, pour in 1 tablespoon olive oil. Place chicken in skillet and cook for 5-7 minutes on each side until no longer pink in the middle and a thermometer registers at 165ºF.
  • While the chicken is cooking prepare the mango salsa and avocado cilantro lime dressing.

Avocado Cilantro Lime Dressing

  • In a blender combine all of the ingredients for the dressing. Blend on high for 1-2 minutes, until smooth.
  • Wash and chop the lettuce. Drain the black beans.
  • When the chicken is done, remove from the pan to a clean plate/cutting board and allow to rest for 5 minutes.
  • Slice the chicken.
  • Assemble salads as desired.

Notes

  • You might not use all of the taco seasoning for this recipe. Store any leftover seasoning in an air tight container in a dry place. 
  • If you would like to make the dressing less thick, add more lime juice and water, one teaspoon at a time until desired thickness.
