Easy Chicken and Rice Soup

Chicken and Rice Soup is so easy to throw together for a quick weeknight meal. We even love making this simple soup recipe for when we have guests, it always gets rave reviews and easily feeds a crowd. 

This rice soup is very filling as well, so can be served as the main course for any meal. With very few ingredients, this soup is inexpensive to make and also makes great leftovers for lunch the next day. Serve this soup with a side of crusty oven baked bread and dinner is served!

How to make Chicken and Rice Soup

Just a few easy steps and bit of time is all it takes to bring this easy soup recipe together. Here are the step by step instructions to making this chicken and rice soup. 

  • Cook the Vegetables: in a large (at least 6 quarts) pot or dutch oven, cook and stir the chopped onions, carrots and celery in butter. Cook until the vegetables are just tender, about 2-3 minutes. Add in the garlic and cook for an additional 30 seconds. Lastly, for this step add in the dried spices and cook for an additional 3o seconds 
  • Pour in the Chicken Broth: this will make the base of the soup
  • Lastly add in the Chicken and Rice: bring the soup to a boil, then turn down the heat to a simmer. Cover the soup and cook for 20-25 minutes, stirring every 5 minutes. Cook the soup until the chicken is cooked through and the rice is tender.

Chicken and Rice Soup

Chicken and Rice Soup is loaded with vegetables, chicken and rice. Made with simple seasons, this soup is perfect for a quick weeknight dinner or perfect for serving a crowd.

Ingredients

  • 3 celery stalks, sliced
  • 1 onion, diced
  • 2 carrots, peeled and sliced
  • 1 garlic clove
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon butter
  • 8 cups chicken broth
  • 2 chicken breasts, cubed into 1/2 inch cubes
  • 3/4 cup uncooked rice

Instructions

  • in a large 6 quart pot, melt butter and cook and stir carrots, onion and celery for 2-3 minutes until tender.
  • Add in garlic and cook and stir for another 30 seconds. Add in Italian seasoning and salt and pepper. Stir for another 30 seconds.
  • Pour in the chicken broth. Add in the chicken and rice, stir to combine.
  • Cover the pot and cook for 20-25 minutes, stirring every 5 minutes.
  • Cook until the chicken is cooked through and the rice is tender

Notes

Long grain, Basmati or Jasmine rice work well in this recipe. Brown rice can also be substituted but will need a few more minutes to cook.

Can I make Chicken and Rice Soup Ahead?

This soup is better served when it is made. When the soup sits or is placed in the refrigerator, the rice will continue to soak up the liquid and can become a bit soggy. If you need to make this soup ahead, make the rice separate and add to the soup before serving.
