1Pound Boneless, Skinless Chicken Breast
1tbspOlive Oil
1/2Yellow Onion
1Zucchini
1Yellow Squash
2Carrots, peeled
2Celery Stalks
2Garlic Cloves
124 ozBottle Prepared Spaghetti Sauce
1 PoundRigatoni Pasta
Salt and Pepper
3cupsWater
1tspCrushed Red Pepper Flakes (optional)
1CupShredded Mozzarella Cheese
1CupShredded Parmesan Cheese

Instructions
Prepare chicken by trimming and slicing into one inch cubes. Dice the vegetables into small pieces and mince the garlic by crushing with one side of a large knife and chopping into small pieces.
Heat olive oil in a large skillet over medium high heat. When oil is hot add in chicken and saute until browned on all sides. Add in chopped vegetables and garlic and continue to cook 3-4 minutes.
Add uncooked pasta, spaghetti sauce, water and red pepper flakes to the skillet. Stir to combine and get the pasta into the liquid as much as possible.
Bring to boil and cover. Allow to simmer 10-12 minutes, stirring occasionally, until the pasta is al dente.
Uncover the pasta and sprinkle with cheeses. Place cover back on the skillet until cheeses have melted.
