One pot chicken pasta parmesan is a super easy one pan meal! Loaded with vegetables and chicken this is a meal you will love feeding your fam and they will love you for it!!

One pot meals are a lifesaver and this One Pot Chicken Pasta Parmesan is just that!! Done so quickly and all in the same pan…..less dishes! Who doesn’t love that?!

One Pot Chicken Parmesan

Just a few ingredients will have everyone thinking you worked all day on this simple dish. Loaded with veggies and chicken, you won’t think twice about serving this to those you love.

One Pot Chicken Pasta Parmesan is an easy and filling meal perfect for every night of the week!

This one is a major go to for our crazy weeknights, I can get this whole meal ready in the time it takes my daughter to find all her soccer gear and get ready for practice! Now that is a major win in my book because we are always running a million different directions every night, so dinners need to be quick, easy and nutritious!

These are the simple ingredients to make this chicken pasta parmesan. Chicken, vegetables and pasta.

Ingredients for One Pot Chicken Pasta Parmesan

You probably already have everything you need for this dish in your home right now!! These are simple ingredients we always have on hand. What you will need for this one pot meal are:

  • 1 lb Chicken Breast
  • 1 Zucchini
  • 1 Yellow Squash
  • 1/2 Yellow Onion
  • 2 Garlic Cloves
  • 2 Carrots
  • 2 Celery Stalks
  • 1 24 oz Bottle of Prepared Spaghetti Sauce, or you can make my spaghetti sauce recipe if you prefer homemade.
  • 3 1/4 Cups of Water
  • 1 lb Rigatoni Pasta, or pasta of your choice

How to Make One Pot Pasta

Okay, I know this isn’t rocket science and many of you have probably already mastered the one pot meal! It’s pretty much just throw all the goodness in the skillet and let the cooking magic happen.

Start by browning the cubed chicken on all sides, don’t worry about having it cooked all the way through at this point, it will continue to cook as the pasta boils. Once the chicken is all nice and golden, add in all the chopped veggies and let those cook for a few minutes.

Now for the one pot meal wonder!! Dump in your uncooked pasta, water and spaghetti sauce. Bring all this to a boil and cover for 10-15 minutes until the pasta is al dente. Sprinkle with cheesy goodness and enjoy!!!

One Pot Cheesy Pasta

You really can’t go wrong with melted cheese and pasta, even if there are a bunch of those nasty vegetables in there (says all of my kids, including the hubs). Sometimes, you just have to make vegetables happen and mixing them in with other deliciousness is the best why I have found to feed them to my fam!

They won’t even know they are in there, you can even go as far as pureeing them before cooking if your fam is extra picky.

Ingredients

  • 1 Pound Boneless, Skinless Chicken Breast
  • 1 tbsp Olive Oil
  • 1/2 Yellow Onion
  • 1 Zucchini
  • 1 Yellow Squash
  • 2 Carrots, peeled
  • 2 Celery Stalks
  • 2 Garlic Cloves
  • 1 24 oz Bottle Prepared Spaghetti Sauce
  • 1 Pound Rigatoni Pasta
  • Salt and Pepper
  • 3 cups Water
  • 1 tsp Crushed Red Pepper Flakes (optional)
  • 1 Cup Shredded Mozzarella Cheese
  • 1 Cup Shredded Parmesan Cheese

Instructions

  • Prepare chicken by trimming and slicing into one inch cubes. Dice the vegetables into small pieces and mince the garlic by crushing with one side of a large knife and chopping into small pieces. 
  • Heat olive oil in a large skillet over medium high heat. When oil is hot add in chicken and saute until browned on all sides. Add in chopped vegetables and garlic and continue to cook 3-4 minutes. 
  • Add uncooked pasta, spaghetti sauce, water and red pepper flakes to the skillet. Stir to combine and get the pasta into the liquid as much as possible. 
  • Bring to boil and cover. Allow to simmer 10-12 minutes, stirring occasionally, until the pasta is al dente. 
  • Uncover the pasta and sprinkle with cheeses. Place cover back on the skillet until cheeses have melted.
