Watermelon is such a delicious summer treat. You really can’t beat a ripe, watery, flavorful watermelon. It is so good on its own or bring out even more amazing flavors by mixing it with the simple flavors in this watermelon salad recipe.

This Watermelon Feta Salad is so easy to put together and is always a big hit wherever we take it.

Watermelon Feta Salad Ingredients

Let’s get right to the heart of this recipe-the ingredients! As stated you will only need a few simple ingredients, to make this watermelon salad you will need the following:

  • 3 cups watermelon, cut into 1 inch cubes
  • 1.5 cups sliced cucumbers-remove the seeds with a spoon if desired
  • 1/2 cup blueberries
  • 1/4 cup feta cheese crumbles- I prefer the cheese that is already in crumbles, but you can buy the block and crumble it as well. The block tends to have a stronger flavor.
  • 2 tablespoons mint leaves

Honey Lime Dressing for Watermelon Salad

Now for the honey lime dressing, you will need:

  • 3 tablespoons avocado oil, or olive oil
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 1/2 teaspoon salt
  • 1 tablespoon honey

Tips for making Watermelon Cucumber Salad

Start by slicing the watermelon into small, one inch cubes. This can be easily done by first cutting the watermelon into two separate halves, then slicing those halves into two additional halves.

Next, slice the watermelon into one inch rows across the top and then slice into one inch slices across the front. At this point, you should be able to tip the watermelon and the cubes will fall out, just slice near the rind to release the remaining cubes.

Combine the watermelon, cucumbers, blueberries, red onions and feta cheese in a large salad bowl. Pour the dressing over the salad and toss to combine and coat everything. Keep refrigerated until ready to serve.

Can I make Watermelon Feta Salad ahead?

To make this salad ahead, simply prepare the watermelon, cucumber, blueberries and red onion by slicing and storing in air tight containers in the refrigerator. Keep the dressing separate until just ready to serve, this will help the watermelon to stay fresh until ready to eat.

Ingredients

  • 3 cups watermelon cut into 1 inch cubes
  • 1 1/2 cups cucumbers sliced with seeds removed
  • 1/2 cup blueberries
  • 1/4 cup feta cheese crumbles
  • 1/4 cup red onion thinly sliced
  • 2 tablespoons mint leaves sliced

Honey Lime Dressing

  • 3 tablespoons avocado oil
  • 1 tablespoon honey
  • 2 tablespoons lime juice
  • 1 teaspoon lime zest
  • 1 teaspoon salt

Instructions

  • In a large mixing bowl, combine the watermelon cubes, sliced cucumbers, blueberries, mint leaves and feta cheese crumbles
  • In a separate bowl, whisk together the avocado oil, lime juice, lime zest, salt and honey until well combined.
  • Pour the dressing over the watermelon mixture and toss to coat.
