 Potato Nachos are such a fun and easy meal to feed your family! This Potato Nachos Recipe starts with crispy baked potato pieces topped with chili, cheese, sour cream, cilantro, olives and anything else you can dream up! Recipes with potatoes are so easy, filling and always inexpensive. I love this potato nachos recipe, because this is one my older kids can make themselves and something that everyone in the family loves to eat. Whether we are eating this for a nice after church snack or a full on dinner, potato nachos are always a favorite!

How to make Potato Nachos

To make this simple potato nachos recipe:

  1. Start by slicing the potatoes into about 1 inch pieces that are all about the same thickness. You don’t want any that are super thick and others that are thin, they won’t cook evenly. 
  2. Lay the potatoes out flat on a greased baking sheet.
  3. Drizzle the potato pieces with olive oil and season with sea salt, black pepper and paprika. Toss to coat.
  4. Bake in a 400ºF oven for 20-25 minutes, flipping once, until fork tender
  5. Remove from the oven and top with chili and cheese. Place back in the oven under the broiler for 3-5 minutes, until the cheese is melted and the chili is heated through.
  6. Remove from the oven for the last time and top with sour cream, parsley, olives and anything else you would like.

What are the Best Potatoes for Potato Nachos?

For this potato recipe, I used Russet potatoes. I think they are pretty hearty and crisp up nicely when baked this way, making these perfect for potato nachos. Yukon Golds are another hearty potato that would work for this recipe. 

Can I make Potato Nachos ahead?

These are best served right out of the oven. The potatoes tend to soften if allowed to cool for too long. If you do need to make these ahead, bake the potato pieces and then place back into the oven for 5-10 minutes again until they are heated through and crisp before topping with all of the toppings.

Ingredients

  • 3 Russet potatoes, medium sized, sliced into 1/2 inch pieces
  • 2 tbsp olive oil
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1/4 tsp paprika
  • 2 14 oz cans chili
  • 2 cups cheddar cheese, shredded
  • 1/2 cup sour cream
  • 1/4 cup parsley, chopped
  • 1 6 oz can black olives

Instructions

  • Preheat oven to 400ºF. Grease a baking sheet.
  • Place sliced potatoes onto greased baking sheet. Drizzle with olive oil and toss to coat.
  • Combine the sea salt, black pepper and paprika. Sprinkle the spices over the potatoes. Flip and season both sides.
  • Place in the oven and bake 25-30 minutes flipping half way through the cooking time.
  • Remove the potatoes from the oven and top with the chili and cheese. Place back into the oven under the broiler and bake for 3-5 minutes, until the cheese is melted and bubbly and the chili is heated through.
  • Top with remaining toppings and eat while still hot.
