Cookie recipes using eggnog are a super fun twist to the Holiday baking season. These Eggnog Cookies are always a huge hit! They are super soft, moist and have a perfect texture. The Eggnog Frosting is the perfect topping and adds extra eggnog flavoring to these eggnog cookies.

How to make Eggnog Cookies

These easy eggnog cookies are super simple to make and can be ready in less than 30 minutes! Exactly what you need during the busy Holiday season!

Tips for making Eggnog Cookie Batter:

  • Cream together room temperature butter, sugar and brown sugar with an electric mixer or in a stand mixer. Add in the vanilla, egg and Eggnog. Continue mixing until a creamy mixture has formed. 
  • In a separate bowl combine the flour, baking soda, salt, cinnamon and nutmeg. Whisk together to remove any lumps. 
  • Pour the flour mixture into the butter mixture and stir to combine until a soft dough is formed. 
  • If you feel the dough is too soft to work with at this point, cover and place in the refrigerator to chill for up to 15 minutes or you can add more flour, just a few tablespoons at a time. This is meant to be a soft dough.
  • Scoop the cookies onto a parchment lined baking sheet. 
  • Using the back of a drinking cup or measuring cup, press the cookies flat onto the baking sheet. Spray the back of the cup with cooking spray if it sticks to the cookies.

Baking Eggnog Cookies:

  • Bake the cookies in a 350ºF oven for 8-10 minutes, until the edges are golden brown
  • Allow to cool before frosting

How to make Eggnog Frosting

To make the Eggnog Frosting combine the softened butter, powdered sugar, eggnog and vanilla in a medium sized mixing bowl. Using an electric mixer or stand mixer, mix the frosting until smooth, scraping down the sides of the mixing bowl as needed to get everything combined. 

Allow the cookies to cool on a cooling rack for at least 10 minutes before frosting. If you frost while the cookies are still warm, the frosting will slide off the cookies.

Ingredients

Eggnog Cookie Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1/2 cup eggnog
  • 2 1/2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp nutmeg
  • 1/4 tsp ground cinnamon

Eggnog Frosting Ingredients

  • 1/4 cup butter, softened
  • 3 cups powdered sugar
  • 1/3 cup eggnog
  • 1/2 tsp vanilla

Cookie Topping

  • 1/4 tsp nutmeg
  • 1/4 tsp ground cinnamon

Instructions

Eggnog Cookie Batter

  • Preheat oven to 350ºF. Line baking sheets with parchment paper
  • Cream together butter and sugars. Add in egg, vanilla and eggnog. Mix until combined and smooth.
  • In a separate bowl whisk together the dry ingredients.
  • Pour the dry ingredients into the bowl with the butter mixture and mix with an electric mixer or in a stand mixer until a soft dough is formed.
  • Using a cookie scoop or spoon, scoop the dough onto the baking sheet. Use the back of a drinking glass to press the cookies flat before baking. If the glass sticks to the dough, spray with cooking spray.
  • Bake the cookies for 8-10 minutes, until golden brown. Place on a cooling rack to cool.

Eggnog Frosting

  • In the bowl of a stand mixer or with a hand mixer. Beat the butter until smooth. Add in the eggnog and vanilla and mix. Pour in the powdered sugar and mix for another minute, scrapping down the sides until the frosting is smooth.
  • Spread over cooled cookies.
  • Mix the nutmeg and cinnamon and sprinkle over the tops of the cookies.

Notes

  • Store any leftover cookies in an airtight container on the counter for at least 2 days. 
  • Eggnog cookies can be frozen after they have been baked
  • This is a really soft dough, if you feel that it is too sticky, you can add additional flour, one tablespoon at a time until it is easier to handle, or place covered in the refrigerator for at least 15 minutes to allow the dough to harden before scooping.
