This Brown Sugar Cookie is one that I grew up with and has stuck with me all these many years. The flavor in these cookies is one of those memorable, cravable flavors you will come back to over and over. These are the softest sugar cookies ever!! Eat them plain or with a beautiful layer of sugar cookie frosting.

Ingredients to make Brown Sugar Cookie Recipe

There is nothing out of the ordinary with this cookie recipe, just a little more brown sugar than you might be used to using in a cookie. Here is what you will need for this recipe:

  • brown sugar– I used a light brown sugar for this recipe
  • butter-unsalted and softened to room temperature
  • eggs-best if brought to room temperature before adding to the recipe
  • baking powder-always check your expiration dates, this can expire and then won’t do its job
  • baking soda-again check the expiration date
  • vanilla
  • salt
  • milk
  • all purpose flour

How to make Brown Sugar Cookies

  • In a large mixing bowl or stand mixer, cream together the softened butter and sugar. Add in the eggs one at a time and mix after each addition. Add the vanilla and mix. 
  • In a separate bowl whisk or sift together the baking powder, baking soda and 6 1/2 cups of the flour. 
  • Alternate adding the flour mixture and milk to the dough and stirring after each addition until a slightly sticky dough forms.

  • Cover and chill for at least 30 minutes
  • Roll out the dough on a lightly floured surface. I like to roll them out to about 1/4″ thick. Cut into shapes with desired cookie cutters
  • Bake on parchment lined baking sheets at 350ºF for 10-12 minutes
  • Allow to cool on the pan for about 5 minutes before transferring to a cooling rack. Frost when cool.

Can I Freeze Sugar Cookies?

The short, easy answer is YES. If you would like to freeze the dough before baking, you can make it into to small rounds, kind of like pie dough, wrap tightly in plastic wrap and then freeze. Another option would be to roll out the dough into a round, place on a baking sheet, freeze and then place into an air tight container until you are ready to use. Also note that if you are layering the rounds place a piece of parchment or waxed paper between the layers.

You can also cut out the cookies before freezing and freeze the shapes until ready to bake. 

If you would like to bake the cookies first and then freeze, that is a great option as well. Freeze the undecorated cookies in an air tight container, if they are staked place a piece of parchment or waxed paper between the layers.

How to Thaw Frozen Cookie Dough

If the cookies have been frozen already cut out into shapes, they can be cooked right from frozen, you might need just a little more cooking time. You will know they are done when they are nice and golden around the edges. 

If the dough was frozen in a rolled out sheet or round, place the dough in the refrigerator to thaw overnight. Roll out and cook as directed. 

The dough can also be thawed on the countertop, just don’t let it get too soft.

Ingredients

  • 2 2/3 cups brown sugar, packed
  • 1 cup butter, softened
  • 3 eggs
  • 3 tsp baking powder
  • 1 tsp baking soda
  • 1 1/2 tsp vanilla
  • 1/2 tsp salt
  • 1 cup milk
  • 6 1/2 cups flour

Instructions

  • Preheat oven to 350ºF. Line baking sheets with parchment paper
  • In a large mixing bowl or stand mixer cream together the butter and brown sugar. Add in the eggs and mix after each one. Add in the vanilla and mix.
  • In a separate bowl, whisk together the dry ingredients
  • Alternately mix in the dry ingredients and the milk until a slightly sticky dough form, add more flour if needed
  • Cover and chill for at least 30 minutes.
  • Roll out on a lightly floured surface to 1/4" thickness. Cut out to desired shapes.
  • Bake for 10-12 minutes. Cool and frost.
