This super simple recipe for Oven Roasted Potatoes is the perfect side dish for any meal. The Roasted Potato Slices are perfectly crispy on the outside and soft on the inside. Almost like the perfect baked french fries. These potato wedges go perfectly alongside a tasty Hamburger, Sloppy Joe or Steak!

Oven Roasted Potatoes

These simple oven roasted potatoes are a fam favorite. The potatoes are slathered in olive oil, seasoned to perfection with a simple seasoning mix of sea salt, black pepper and paprika and baked in the oven until they are golden brown, crunchy and still have that soft potato in the center. 

These potato wedges are ready to serve right out of the oven, don’t wait, they are best when they are fresh and piping hot from the oven.

Type of Potatoes to use for Roasting

For this recipe I used Idaho Russet Potatoes, I had the fortune of buying a 50 pound bag, so it is all thinks potatoes around here these days!  They turned out perfectly. Other varieties that work great for slicing into smaller pieces and roasting are Yukon Gold or even Red Potatoes. 

The key to getting the potatoes crispy on the outside while still soft in the center is to make sure your oven is hot enough, the potatoes are all coated in oil and you take the time to flip them a few times while baking.

How to Serve Baked Potato Fries

These sliced potato fries can be served alone as a side, dipped in ketchup or a simple dipping sauce made from 2 tablespoons of barbecue sauce and 1 tablespoon of mayonnaise. 

Other ways we like to enjoy these potato slices is to make them into potato nachos with layers of chili and cheese or even just top with a layer of shredded cheese and place back in the oven under the broil until the cheese is melty and golden brown on top.

How to make Oven Roasted Potato Slices

  1. Wash and scrub the potatoes clean making sure to get any left on dirt from the skin. 
  2. Slice the potatoes into quarters and then slice each of those quarters into 1/2 inch triangular pieces. Lay the sliced potatoes onto a greased baking sheet. Drizzle with olive oil and toss to make sure all of the potato pieces are coated in olive oil. 
  3. Combine the salt, pepper and paprika. Season the potatoes on all sides with the seasoning mix. 
  4. Bake the potato pieces in a 400ºF oven for 25-30 minutes, flipping at least once half way through baking.

Ingredients

  • 3 Russet potatoes, medium sized, sliced into 1/2 inch thick pieces
  • 2 tbsp olive oil
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1/4 tsp paprika

Instructions

  • Preheat oven to 400ºF. Grease a baking sheet.
  • Place sliced potatoes onto greased baking sheet. Drizzle with olive oil and toss to coat.
  • Combine the sea salt, black pepper and paprika. Sprinkle the spices over the potatoes. Flip and season both sides.
  • Place in the oven and bake 25-30 minutes flipping half way through the cooking time.
