How to Make Easy Scalloped Potatoes

This recipes comes together really quick and easy, the only hard part is waiting for it to cook, the whole house smells amazing!!

To make this recipe, start by slicing the potatoes and onions. I like to slice my potatoes using a sharp knife, it does make the slices imperfect which is fine with me. You can also use a mandolin or if you have an awesome electric slicer use that!!

Once you have all of the potatoes and onions ready to go, start making the cream base. In a medium sauce pan melt the butter, whisk in the milk and season with salt and pepper. You are ready to start layering!

Layers of potatoes, onions and cheese for scalloped potatoes

Cheesy Scalloped Potatoes

In a greased 9 x 13 inch baking dish put down a layer of sliced potatoes, trying not to overlap too much. Randomly spread the minced onion on top of the potato layer, then add a layer of mozzarella cheese on top of the onions and potatoes. Lastly, cover with about 3/4 cup of the cream mixture.

Continue making layers until the pan is full just to the top. This will take about 3 layers. For the final layer, repeat as usual with the potatoes, onions cheese and sauce adding the last ingredient, Parmesan Cheese!!

Cover the pan with foil, place in a 350ºF oven and bake for 1 hour. After one hour, remove the foil and continue to cook for another 30 minutes, until the cheese is bubbly and golden brown!!

    1. Totally! So easy to let these cook while working on the rest of the meal! Thanks for your comment!

      1. Of course. If you want to freeze these, bake as directed for the first 60 minutes, the potatoes won’t be cooked all the way through. At this point, let it cool, cover and place in the freezer for up to 3 months. Place back in the oven, covered in foil at 350 for 45-60 minutes, until cooked through. Remove the foil for the last 10-15 minutes to let the cheese brown.

I can really see how easy it is to assemble these potatoes, something that is not always the case for similar recipes. And that color… it is incredible! Makes me want to ask for more before I even start 🙂

  2. This recipe rocks, And I happen to be vegan sometimes vegetarian and just so people know you can’t replace the dairy milk with organic soy same with the Parmesan variety as well as the Parmesan shredded I went with a nut cheese variety that cashew-based.

These potatoes were so easy. I used Yukon gold potatoes and left the skin on cuz they’re thin but mostly I was lazy. The timing was perfect and the sauce thickened up beautifully. It’s Easter so these went well with the ham of course. Thank you for another yummy recipe.
