Roasted Golden Potatoes

Simple Oven Roasted Yukon Gold Potatoes are so easy to prepare and make a delicious side dish to any meal. These golden potatoes are simply seasoned with garlic, salt, black pepper and a little rosemary. Gold potatoes cook up deliciously crisp on the outside with a fluffy white inside.

Golden potatoes are one of my favorite potatoes to use to make simple side dishes for a quick weeknight dinner or they are even perfect for any Holiday meal. When these gold potatoes are baked all of the sliced edges cook up with a crisp exterior while keeping a creamy interior.

This recipe for Crispy Roasted Gold Potatoes is my favorite way to prepare this soft, fluffy tater. Let’s get to it!

Ingredients for Yukon Gold Roasted Potatoes

To make this simple roasted potato recipe you will need just a few simple ingredients. Most of these are kitchen staples that you most likely already have on the shelves in your home. For this recipe you will be using:

  • Yukon Gold Potatoes– those beautiful golden, yellow potatoes with the thin skin and yellowish flesh
  • olive oil
  • sea salt
  • black pepper
  • garlic
  • fresh rosemary– dried rosemary can be substituted if you don’t have fresh. Just add 1 teaspoon of dried rosemary.

How to make Roasted Yukon Gold Potatoes

First, start by giving the potatoes a good wash. Just use your hands to scrub the outside of the potatoes, these gold potatoes have a thin skin so if you rub too hard, the skin will scrape off.

Next, slice the potatoes into quarters. First, slice the in half and then each half into halves again. Try to get them all to about the same size so they will all cook in evenly.

Place all of those beautiful, sliced potatoes right onto a large baking sheet and drizzle with olive oil. Toss them all to coat in the oil.

Season with the salt and black pepper. Add the minced garlic and rosemary and give them one more toss so they all get some love from the seasonings.

Make sure that the potatoes are laying down on the pan on one of the cut sides. This will ensure that the outsides get nice and crispy while baking. Half way through the baking time, flip them over to the other side.

How long to bake Golden Potatoes

Get your oven nice and hot, up to 425º F. These potatoes are going to bake for 40-45 minutes, until they are fork tender. This means, when you poke the potato with a fork, it will slide easily into the flesh.

Don’t forget to take the pan out after about 20 minutes and flip the potatoes over so both sides will get nice and crispy.

What to do with leftover Roasted Golden Potatoes

Store any leftover potatoes in an airtight container in the refrigerator for up to 3 days.

We love to use left over potatoes in other recipes, like this easy breakfast hash. These can also be reheated in the microwave for 1-2 minutes and used again as a delicious side for another meal. Additionally, the air fryer is another great way to reheat these potatoes and they will come out crisp and delicious.

Ingredients

  • 3 pounds yukon gold potatoes cleaned and sliced into quarters
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon garlic minced
  • 1 tablespoon fresh rosemary

Instructions

  • Preheat oven to 425º F
  • Place sliced potatoes onto a large baking sheet.
  • Drizzle with olive oil and toss to coat in the oil
  • Season with the salt, black pepper, minced garlic and rosemary. Toss again to coat in the seasonings.
  • Arrange the potatoes in a single layer on the baking sheet and make sure one cut side is laying down on the pan.
  • Bake the potatoes for 20 minutes, flip them over and bake for an additional 20-25 minutes, until they are fork tender.
