This Salted Caramel Cookie Skillet is the perfect combination of a classic, buttery chocolate chip cookie with a soft, caramel center all baked in one cast iron skillet.
Preheat the oven to 350º F and grease a 12 inch cast iron skillet
Combine 1 cup unsalted butter, 3/4 cup light brown sugar, 1/2 cup sugar, 1 egg, and 1 1/2 teaspoons vanilla in a large mixing bowl and beat with an electric mixer until creamy.
Add in the 2 1/4 cups all purpose flour, 1/2 teaspoon salt, and 1 teaspoon baking soda and continue to mix until a soft dough is formed.
Fold in the 1 1/2 cups chocolate chunks. (reserve some of the chocolate and caramels for topping the cookie if desired)
Place the 11 ounce caramel package unwrapped and 2 tablespoons heavy cream in a microwave safe bowl. Cook for 2 minutes, until melted and bubbly.
Place 1/2 of the cookie dough into the cast iron skillet and press out evenly in the bottom of the pan.
Pour the melted caramel over the top of the cookie dough in the pan, making sure not to go right to the edge.
Place pieces of the remaining cookie dough over the top of the caramel until covered.
Bake for 20-25 minutes until the edges are golden brown and the center is soft but not jiggly.
Sprinkle the 1 tablespoon flaky sea salt over the top of the cookie just before serving.
