Why I Recommend Baking in a Cast Iron Skillet
Cast iron skillets are so easy to bake in, I feel like there is a little fear of the unknown when using cast iron. But you don’t need to fear, it’s really so easy, and skillet desserts are just the best.
Cast iron makes the best cakes and giant skillet cookies while also giving that rustic charm, like cooking in grandma’s kitchen.
Cast iron skillets are for more than just making the perfect steak. They are great for making all kinds of simple cast iron desserts like this salted caramel skillet cookie, or even this peanut butter skillet cookie.
Cast iron is known for its even heat distribution, helping to make the perfect crunchy outer crust all over the outside of the cookie.
Additionally, the beautiful non-stick surface means the cookie will easily be released from the pan and makes cleanup a breeze. Got to love that!

How to Make Salted Caramel Cookie in a Cast Iron Skillet
Combine the Wet Ingredients
- in a large mixing bowl combine together the butter, light brown sugar, sugar, egg, and pure vanilla. Use an electric mixer, stand mixer or wooden spoon to blend all of the wet ingredients together until they are well combined.
Mix in the Dry Ingredients
- to the butter mixture add the flour, baking soda, and salt. Use the electric mixer to combine the dry ingredients with the wet ingredients. Scrape down the sides of the bowl as needed while mixing to make sure everything is incorporated.
- fold (this just means, folding the edges of the cookie dough into the center over the chocolate chunks until they are mixed in) the chocolate chunks into the batter with a sturdy spatula or wooden spoon.
Melt the Caramels
- combine the caramels with 2 tablespoons of heavy cream and place in a microwave safe bowl. Microwave the caramels for 2 minutes, until the caramel is melted and smooth.
Spread the Cookie Dough in the Skillet
- spread half of the cookie dough evenly into the bottom of a greased 12 inch cast iron skillet. I usually end up using my hands the help press the dough out.
- pour the caramel over the bottom half of the dough and spread close to the outer edge.
- add the remaining cookie dough over the top of the caramel by taking a piece of dough and pressing it flat, then adding to the top of the caramel. It’s okay if some of the caramel is still visible.
Bake the Skillet Cookie
- bake the skillet cookie in a 350º F oven for 20-25 minutes. The edges should be brown and the center should be soft, but not jiggly.
- place extra pieces of caramel and chocolate chunks on top if desired while the cookie is still warm.
- just before serving, sprinkle with flaky sea salt.
Storing Tips
- Room temperature: store on the counter in an airtight container for 2-3 days
- Refrigerator: store in the refrigerator in an airtight container for 4 days
- Freezer: freeze slices of this oatmeal cookie for up to 4 months, let thaw at room temperature
