Skillet Chocolate Chip Cookie Recipe
We have made this giant chocolate chip cookie so many times. It is so simple to make and the crispy edges and gooey center are so hard to resist. Our fam loves to top this skillet cookie with scoops of ice cream and caramel or hot fudge to really take this cookie over the top.
Making this giant cookie right in a cast iron skillet makes this recipe super easy. Simply make the chocolate chip cookie dough and press into the cast iron skillet, then straight into the oven to bake to warm cookie perfection. Serve right from the pan, cut into slices or scoop out individual servings with a scoop of vanilla ice cream.
To Make This Chocolate Chip Cast Iron Cookie Recipe
To make this chocolate chip cast iron cookie recipe, start by creaming together room temperature butter, brown sugar, sugar, vanilla, an egg and one egg yolk in a large mixing bowl. Simply mix with an electric mixer or in the bowl of a stand mixer with paddle attachment until everything is well combined. The sugar should be mixed in well and the butter will be fluffy and smooth.
Next, sift in the dry ingredients. I like to place a wire mesh strainer over the top of the bowl containing the butter. Then place the flour, salt and baking soda into the strainer. Then all you need to do is tap the side of the strainer to sift the flour mixture into the butter mixture.
Next, use the electric mixer to mix the dry ingredients into the wet ingredients until well combined. Use a spatula to scrape down the sides of the bowl as needed to make sure all the ingredients are incorporated into the cookie dough.
Lastly, add in the chocolate chips and mix until they are well distributed throughout the dough. I like to just continue to mix with the electric mixer, or you can just fold them in with a spatula if you prefer.
Press the chocolate chip cookie dough into a 12 inch cast iron skillet. Make sure the dough is pressed evenly into the pan, so the cookie will bake evenly.
The pan does not need to be preheated before placing the dough into the pan. Sprinkle a few extra chocolate chips over the top of the dough and bake in a 375º F oven for 20 minutes, until the edges are golden brown. The center will still be soft and warm and ooey-gooey!
How To Serve Cast Iron Skillet Cookie
Chocolate chip cookie skillet is best served warm, right out of the oven. We love to top this giant cookie with vanilla ice cream, fresh whipped cream, some warm caramel and even hot fudge or chocolate sauce.
We might be found to go at this with a spoon right out of the pan, however, if you want to be more civilized, scoop some out into a bowl or slice like a pie and top with your favorite toppings.
