One of my favorite skillet cookie recipes is this skillet brookie, it is a delicious combination of brownie and chocolate chip cookie, talk about rich. I wasn’t sure I would find another skillet cookie I liked as much, but I may have just done it with this Brown Butter Pecan Cookies Skillet Recipe.

This cast iron cookie gets the most delicious, crisp outer crust while still staying soft and gooey in the center. I love that this recipe is so easy to throw together and can be a last minute dessert if needed.

Serve this butter pecan chocolate chip cookie with a scoop of vanilla ice cream and some warm caramel syrup for a knock-your-socks-off dessert.

  • place the butter into a 12 inch cast iron skillet over medium heat. Melt the butter and bring to a simmer, cook and stir until the butter becomes foamy, continue stirring until the butter is browned and smells like caramel. The butter will be brown with little flecks in it.

  • start by adding the brown sugar, sugar, and vanilla to the brown butter and mix until combined. Then, add in the pecans and egg, mix well.

  • stir in the all purpose flour, coarse sea salt, baking soda, and baking powder until a soft cookie dough is formed in the skillet.

  • lastly, fold in the chocolate chips and press the cookie dough evenly into the cast iron skillet. Top the cookie with more chocolate chips and pecans if desired before baking.
  • bake the skillet pizookie in a 350º F oven for 22-25 minutes. The edges will be golden brown and the center will be soft, but not jiggly.

How to Serve Skillet Cookie

If we are making this just for our family, you might just find us grabbing a spoon and eating straight out of the pan!! This cookie is best served warm with a scoop of vanilla ice cream, or even top it with your favorite ice cream topping to make it into a cookie sundae.

How to Make A Pizookie without a Cast Iron Skillet

This skillet cookie recipe can be made without a skillet if you don’t own one. Make the cookie dough in a separate mixing bowl, then press it into a greased 9 x 13 inch baking dish and bake according to the recipe below.

Leftovers and Storage

If you do happen to have some leftover cast iron skillet cookie, take it out of the skillet and store in an air tight container or zip top bag on the counter for up to 3 days or in the refrigerator for 1 week.

This skillet cookie can also be frozen; freeze slices or the whole cookie out of the skillet in a freezer bag for up to 3 months.

Ingredients

  • 1 cup butter browned
  • 3/4 cup brown sugar
  • 1/2 cup sugar
  • 1 cup pecans chopped
  • 1 egg
  • 1 1/2 teaspoons vanilla
  • 2 1/4 cups all purpose flour
  • 1 teaspoon coarse sea salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 1/2 cups semi-sweet chocolate chips

Instructions

  • Preheat: heat the oven to 350º F
  • Make the browned butter: place the 1 cup butter into a 12 inch cast iron skillet over medium heat. Melt the butter and bring to a simmer, cook and stir until the butter becomes foamy, continue stirring until the butter is browned and smells like caramel. Remove from the heat, allow to cool, until it is just warm to the touch.
  • Make the cookie dough: add the 3/4 cup brown sugar, 1/2 cup sugar, and 1 1/2 teaspoons vanilla and mix with the browned butter until combined. Then, add in the 1 cup pecans and 1 egg, mix well.
  • Add the dry ingredients: stir in the 2 1/4 cups all purpose flour, 1 teaspoon coarse sea salt, 1/2 teaspoon baking soda, and 1/2 teaspoon baking powder until a soft cookie dough is formed. Fold in the 1 1/2 cups semi-sweet chocolate chips until incorporated in the dough.
  • Bake: bake for 22-25 minutes, until the edges are golden brown and the center is not jiggling.
