I am obsessed with baking cookies right in my cast iron skillet. They get a perfectly crisp crust while still staying soft and tender in the center.

I have been baking skillet cookies on repeat recently and I must say this fruit pizza cookie has to be towards the top as one of my favorites. The subtle lemon flavor in the cookie crust really adds so much to the sugar cookie crust.

This fruit pizza recipe uses simple, pantry staple ingredients for the crust, then decorate however you desire and make it your own with delicious freshly sliced fruit and berries.

Why Bake in a Cast Iron Skillet

Cast iron skillets are so easy to bake in, they make the best giant skillet cookies while also giving that rustic charm.

Cast iron skillets are for more than just making the perfect steak. They are great for making all kinds of simple cast iron desserts like this fruit pizza skillet cookie, or even this peanut butter skillet cookie.

Cast iron is known for its even heat distribution, making the perfect crunchy outer crust and soft cookie center.

Additionally, the beautiful non-stick surface means the cookie will easily be released from the pan and makes cleanup a breeze.

Can I make this Fruit Pizza Recipe Without a Cast Iron Skillet?

This recipe can be made on a 12 inch round pizza pan if you don’t own a cast iron skillet. Simple press the cookie dough out onto a well greased pizza pan and bake as directed in the recipe card at the bottom of this page.

Ingredients You Need For Easy Fruit Pizza

Let’s walk through what you will need to gather to make this fruit pizza deliciousness happen.

Ingredients:

  • 1/2 cup butter, room temperature- I always use unsalted
  • 3/4 cup sugar
  • 1 egg, room temperature
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon lemon zest- the recipe says optional, but I wouldn’t skip this
  • 1 teaspoon pure vanilla

Cream Cheese Topping Ingredients:

  • 2 tablespoons butter, softened
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon pure vanilla

How to Make Fruit Pizza in a Cast Iron Skillet

Make the Lemon Sugar Cookie Base

  • in a large mixing bowl or stand mixer, combine the softened butter and sugar. Mix until they are well combined.
  • add in the egg and vanilla, and continue to mix until combined, about 1 minute

  • add the flour, baking powder, salt and lemon zest to the creamed butter and sugar. Mix with an electric mixer on medium heat until a soft dough is formed.
  • scrape down the sides of the bowl as needed during mixing to make sure everything is combined.

Spread Out the Cookie Dough and Bake

  • in a lightly greased cast iron skillet, press the lemon sugar cookie dough evenly across the bottom of the pan.
  • use clean hands or the back of a glass or measuring cup to help spread the dough in the skillet.
  • bake the cookie in the oven heated to 350º F for 15-20 minutes. The edges of the cookie will be golden brown when done cooking

Cream Cheese Frosting

  • while the lemon sugar cookie base cools completely, make the cream cheese frosting
  • with an electric mixer, beat the softened cream cheese and butter until smooth
  • add in the vanilla and half of the powdered sugar, mix until combined
  • add in the remaining powdered sugar and mix until a smooth frosting is made. Mix for about 1 minute on medium, scraping the sides of the bowl as needed.

Decorate the Fruit Pizza

  • after the cookie base has cooled completely spread the cream cheese frosting over the cookie with a knife or spatula
  • add sliced fruit to decorate and add color and flavor to this fruit pizza
  • use a variety of fruits and either add in a pattern, or just add randomly as I did to create a beautiful fruit pizza

Fruits to Use on Fruit Pizza

Any fruit would work great in this fruit pizza recipe, some of our favorites to use are:

  • fresh berries- strawberries, blackberries, blueberries, and raspberries
  • kiwi fruit
  • pomegranate
  • pineapple
  • mint leaves
  • mangoes
  • grapes

Make Ahead and Storage

Make Ahead Instructions: if you need to make this recipe in advance, start by making the cookie one day in advance, cover and store until ready to decorate. The cream cheese frosting can also be made a day in advance of when you will serve this fruit pizza, just keep in the refrigerator.

Place the frosting on the countertop for 10 minutes before using to help it spread easier. Then top the cookie pizza base with fresh fruit, berries and mint leaves to decorate.

Storage: to store this fruit pizza, remove from the cast iron skillet and place in an air- tight container. Store in the refrigerator for 1-2 days. If the fruit you used was really juicy, the cookie might get soggy quickly, so this recipe is best served and eaten the same day.

Ingredients

Instructions

  • Preheat oven to 350º F and grease a 12 inch cast iron skillet
  • In a large mixing bowl or stand mixer, cream together the butter and sugar until well combined
  • Add in the egg and vanilla, continue to mix until smooth
  • Add the flour, baking powder, salt, and lemon zest to the bowl and mix together with the electric mixer on medium until a soft dough is formed. Scrape down the sides of the bowl as needed while mixing.
  • Press the cookie dough evenly into the bottom of the prepared cast iron skillet.
  • Bake for 15-20 minutes until the edges are just golden. Remove from the oven and allow to cool in the pan.

Cream Cheese Frosting

  • While the cookie cools, prepare the cream cheese topping. In a mixing bowl add the butter and cream cheese. Beat with an electric mixer until smooth.
  • Add in the vanilla and half of the powdered sugar. Mix until combined.
  • Add in the remaining powdered sugar and continue to mix until the frosting is smooth.
  • Using a knife or spatula, spread the softened frosting over the top of the cookie.
  • Top with fresh fruits and berries in a pattern or randomly to create a beautiful fruit pizza.
