Grease the pan before adding the dough, let rise, top with oil, and use your fingers to make the holes in the top, then cook according to the instructions in the recipe card at the bottom of this page.

Ingredients Needed For This Focaccia Recipe


  • All Purpose Flour– the base of this easy cast iron bread recipe
  • Instant Yeast– make sure you are using the instant kind of yeast, it will rise much quicker and doesn’t not need to bloom before being added to the other ingredients.
  • Sugar– just a pinch to round out the flavors
  • Sea Salt– always needed for balancing out and adding flavor
  • Water– warm to the touch water to help the yeast activate
  • Olive Oil– helps bake the outside of this focaccia bread perfectly golden and crispy

How to Make Same Day Focaccia Bread

Make the Dough

  1. Make the dough– In a large mixing bowl, combine the flour, yeast, sugar, and sea salt. Pour in the water and stir with a dough hook, wooden spoon or electric mixer for about 2 minutes until a sticky dough has formed and pulls away from the sides of the bowl.

  1. Stretch and Fold– cover the dough and allow to rise for 20 minutes. After 20 minutes, wet hands and pull the dough from each 4 different corners stretching it to the center. Repeat this 2 more times, covering between each stretch and fold. (Wet hands will help the dough from sticking to your hands)

  1. Rise– pour the dough into a 12 inch cast iron skillet that has about 2 tablespoons of olive oil spread in the bottom. Rise, covered in a warm place for 1 hour.

  1. Prepare for Baking– After the dough has risen for an hour, pour remaining olive oil over the dough and use your fingers to press holes all over the top of the dough before baking.

  1. Bake– Heat the oven to 450º F and bake for 18-20 minutes until the outside is brown and crisp and has a hollow sound when you tap on the bread.
  2. Serve– Top with some flaky sea salt before serving as desired and serve alongside your favorite comfort meal or use to make a delicious sandwich.

Same Day Skillet Foccacia

Same day skillet focaccia is made with simple pantry ingredients and bakes up golden brown and crispy right in a cast iron skillet.

Ingredients

  • 3 cups all purpose flour
  • 2 1/4 teaspoons instant yeast
  • 1 teaspoon sugar
  • 1 1/2 teaspoons salt
  • 1 1/2 cups warm water
  • 1/4 cup olive oil divided

Instructions

  • In a large mixing bowl or stand mixer combine the 3 cups all purpose flour, 1 teaspoon sugar, 1 1/2 teaspoons salt, and 2 1/4 teaspoons instant yeast. Pour in the 1 1/2 cups warm water and mix together with a wooden spoon, dough hook or clean hands until a soft, slightly sticky ball is formed. About 2 minutes.
  • Cover the dough and rise for 20 minutes, dip fingertips into water and fold dough from four corners to the center. Lift from the side and pull the dough up to the center. Repeat 2 more times (a total of 3 folds-60 minutes).
  • After 1 hour, pour half of the 1/4 cup olive oil into the bottom of a 12 inch cast iron skillet. Brush oil along bottom and up the sides of the pan. place the dough into the center of the pan and cover again, allow to rise for 1 hour.
  • Heat the oven to 450º F
  • While the oven heats, pour the remaining oil over the dough and use fingers to press dimples into the dough and spread it out in the pan. Sprinkle with flaky sea salt before baking.
  • Bake for 18-20 minutes until golden brown and crispy.
