Chocolate Zucchini Bread is a simple bread recipe loaded with delicious chocolate flavor and loaded with healthy zucchini! All you can taste is chocolate goodness with this recipe, you won’t even know the zucchini is there!

Chocolate Zucchini Bread is one of my favorite ways to utilize some of that delicious garden zucchini. If you have ever planted a garden with zucchini, you know that by the end of the season you are trying a million ways to eat up that zucchini! Add this simple Zucchini Bread recipe to your list, you will love it and so will the fam, or neighbors, random strangers…whomever you decide to share this with!!

How to Make Chocolate Zucchini Bread

This Easy Chocolate Zucchini Bread Recipe comes together quickly,  you are going to master this in no time! Just a few simple steps and you are in moist chocolate zucchini bread heaven! To make this zucchini bread recipe simply do the following.

  1. Start preparing two large loaf pans or 8 mini loaf pans by greasing with butter or cooking oil spray. Preheat the oven to 350ºF
  2. Grate the zucchini with a large grater until you have 2 full cups of grated zucchini
  3. In a large mixing bowl or stand mixer add the 3 eggs and beat until they are yellow, like the color of a lemon. This will take 1-2 minutes.
  4. Add in the sugar and oil and mix until well incorporated, add the vanilla and mix
  5.  In a medium sized mixing bowl sift together the flour, baking soda, baking powder, cinnamon and nutmeg. Mix into the egg mixture, scraping down the sides until a batter is formed. This will not be a runny batter.
  6. Add the salt
  7. Melt the chocolate in the microwave for 30 seconds, stir and then another 30 seconds, checking every 10 seconds, until it is melted. This can also be done in a double boiler if you don’t have a microwave. Add the melted chocolate to the batter and mix quickly to incorporate it all into the batter.
  8. Add the zucchini and mix
  9. Pour the batter into the prepared loaf pans. Sprinkle chocolate chips on top.
  10. Bake for 45-50 minutes, until a toothpick inserted in the center comes out clean.
  11. Cool for 10 minutes before serving.

What Type of Chocolate to use in Zucchini Bread

For this recipe I prefer to use an unsweetened baking chocolate. You can find this in the baking isle at the grocery store. It looks like a delicious chocolate bar, but don’t be fooled, this chocolate on its own is not delicious…it is bitter! If you are a little spicy like me, don’t tell your fam it’s not delicious and let them have a little taste! They almost can’t resist it, it does look like a perfectly tasty bar of chocolate!!

If you can’t find baking chocolate, cocoa powder can be used in its place. Just replace the 2 oz of baking chocolate with 1/2 cup of cocoa.

How to Melt Baking Chocolate

It is very simple to melt the baking chocolate for this recipe. I like to just pop it in the microwave for 30 seconds, give it a quick stir and then microwave for another 30 seconds. On the last 30 seconds, I stop it after 10 seconds and give it a stir, then 10 seconds and stir, until it is fully melted. You will want to keep and eye on it because it can burn quickly and then turn into a solid that will never melt again.

If you prefer to not use the microwave, you can place a metal bowl over a pot of boiling water on the stove and stir until the chocolate has melted.

For this recipe you will need the following:

  • 3 eggs

  • 1 cup vegetable oil
  • 1 1/2 tsp vanilla

  • 1 tsp cinnamon

  • 2 oz unsweetened baking chocolate
  • 1/4 cup chocolate chips

Ingredients

  • 2 cups sugar
  • 1 cup vegetable oil
  • 1 1/2 tsp vanilla
  • 3 cups flour
  • 1/4 tsp baking powder

Instructions

  • Add in the zucchini.
  • Melt the baking chocolate in the microwave for 30 seconds to 1 minute, stirring frequently until melted. Add to the batter and mix until well incorporated.
  • Pour into 2 well greased loaf pans and sprinkle chocolate chips on top.
  • Bake for 45-50 minutes, or until a toothpick comes out clean.
