Breakfast Casserole with Hashbrowns

We love this breakfast casserole, it is perfect for weekend breakfasts, family brunches or we even love to make it for dinner. This casserole is great as a meal on it’s own, or serve alongside a fruit salad or even some french toast.

Breakfast Casserole Ingredients

You might already have these items on hand, but if not, this is the list of items you will need to pick up to make this simple breakfast casserole recipe:

  • Frozen Hashbrowns: These can be found right in the freezer section of your grocery store. I like to use the country style hashbrowns, but honestly, whichever you can get your hands on will work. The hashbrowns need to thaw before being added to the casserole, so set them out for about 20 minutes while you prepare the ingredients.
  • Large Eggs
  • Milk: I like to use Whole Milk whenever it is called for in baking, but really any milk will work in this recipe.
  • Ham: you can purchased diced ham, or this recipe is perfect for any leftover ham you might have from a Sunday dinner or Holiday.
  • Cheddar cheese and Swiss Cheese: The combination adds a delightful flavor to this casserole.
  • Spinach: you won’t even know it is there!!
  • Salt, Black Pepper and Onion Powder: for a whole lot of flavor

How to make Breakfast Casserole ahead

If you’ve got a big party planned and it would be super helpful to be able to prepare this ahead, you can absolutely do that with this recipe.

This recipe can be made at least 12 hours in advance. Mix together the ingredients and place into the casserole dish, cover tightly and refrigerate until ready to bake. Bake as directed and serve.

How to Store Leftovers of Breakfast Casserole

If you happen to have leftovers of this hashbrown casserole, they can be stored in an air tight container for up to 3 days in the refrigerator.

Can I freeze Hashbrown Breakfast Casserole

This casserole can be safely frozen for up to 3 months. To freeze, cook the casserole as directed. Allow to cool, then cover tightly with plastic wrap or foil and freeze.

How to reheat Breakfast Casserole

Leftovers of this breakfast casserole can be reheated in the microwave in individual portions for 1-2 minutes, until heated through.

If you need to reheat the whole pan, cover with foil and place in a 350º F oven for 15-20 minutes.

From frozen, cook for 50 minutes covered with foil then uncovered for 20-25 at 350º F

Go ahead and mix things up, make this recipe your own:

  • Vegetables: additional veggies you could add in are broccoli, peppers or even zucchini
  • Proteins: Sausage or Bacon would be great additions to this dish, just make sure they are fully cooked before adding them in
  • Cheese: Really the options are endless, Colby-Jack, all Sharp Cheddar, Mozzarella, Parmesan, Asiago, choose your own adventure!

How to make Hashbrown Breakfast Casserole

The steps to make this simple casserole dish are pretty straight forward and easy. Start by whisking together the eggs and the milk. Add in the spices and whisk until combined.

Lastly fold in the cheeses, ham and thawed hashbrowns until everything is combined and covered in the egg mixture.

Pour everything into a greased 9 x 13 inch baking dish. Cover with foil and bake for 40 minutes, after that, uncover it and continue to cook for an additional 20 minutes.

Hashbrown Breakfast Casserole

This easy Hashbrown Breakfast Casserole is loaded with eggs, spinach, hashbrowns, ham and cheese. Perfect for a brunch or family gathering.

Ingredients

  • 8 eggs
  • 1 cup whole milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 cup ham, diced
  • 1 cup cheddar cheese, grated
  • 1 cup Swiss cheese, grated
  • 1 cup spinach, chopped
  • 30 oz hashbrowns, thawed

Instructions

  • Preheat oven to 350º F and grease a 9 x 13 inch baking dish
  • In a large mixing bowl, whisk together the eggs and milk. Add in the salt, black pepper and onion powder, mix until combined.
  • Fold the cheddar, Swiss cheese, spinach and ham cubes into the egg mixture.
  • Add the thawed hashbrowns into the egg mixture and stir until coated
  • Pour out into a greased 9 x 13 inch baking dish
  • Bake covered with foil for 40 minutes, uncover and continue to cook for 20 minutes, until cooked through and golden on the edges.

Notes

  • If your hashbrowns have not thawed and you don’t have time to wait, you can mix them in it will just take a bit longer to cook the casserole.
