Air Fryer Chimichangas

It is so easy to make delicious, crispy, stuffed Chicken Chimichangas right in the air fryer. These air fryer chicken chimichangas are loaded up with shredded chicken, beans, cheese and are seasoned just perfectly.

Serve these with some air fryer roasted salsa for a simple meal idea!

We love making simple meals like chimichangas in our air fryer. Skip the frozen ones and make up a batch of these, so much better.

How to make Chicken Chimichangas in the Air Fryer

Let’s walk through the simple steps to make these delicious chimichangas cooked right in the air fryer. This is the air fryer that I have: Gourmia 6 Quart Digital Air Fryer.

First, let’s start with what you will need.

Chimichanga Ingredients:

  • Flour tortilla shells– for this recipe, I like to use the soft taco sized tortillas. Whole wheat tortillas can be used as well
  • Shredded chicken– you will need just one cup of shredded chicken to make 4 chimichangas
  • Black beans
  • Salsa
  • Shredded cheddar cheese
  • Spices
    • cumin
    • oregano
    • chili powder
  • Cooking spray oil

Making Air Fryer Chimichangas

Start by preheating your air fryer to 400º F. Then, while the air fryer is heating up, mix together the shredded chicken, salsa, black beans (drained and rinsed) and all of the spices.

Next, spoon out one fourth of the chicken mixture into the center of each of the flour tortillas. Top the chicken mixture with some shredded cheese.

Now, fold the tortilla in on each end towards the center and then roll up the chimichanga from the other edge.

Place the chimichanga seam side down into the basket of your air fryer. Be careful as it is already hot from preheating.

Then, spray the tops of the chimichangas with cooking spray.

Cook in the air fryer for 10-15 minutes, until they are heated through and golden brown and crispy on top.

Tips for making Chimichangas in the Air Fryer

  • The chimichangas can just be brushed with oil or butter if you would rather not use cooking spray oil.
  • Try not to over crowd the air fryer. My air fryer can fit four chimichangas at a time, but if you can fit more, go for it, or adjust if you need to cook fewer at a time.
  • Don’t over stuff the tortillas, they will expand a little while cooking and you don’t want the filling to fall out all over your air fryer.

Ingredient Substitutions:

  • You can use any other kind of beans you prefer. We like to use pinto beans as well in this recipe
  • Mix up the cheeses. Pepper Jack, Monterey or even a nice sharp Cheddar would add so much great flavor to these chimichangas
  • Add more spice by dicing up a jalapeno or even add some diced green chiles

Storing Instructions

To store cooked chimichangas, place in an air tight container or zip top bag. Keep in the refrigerator for up to 4 days.

To freeze, wrap tightly in plastic wrap and then into an air tight container. Freeze for up to 6 months.

To reheat, place in the microwave for one minute, or, preferably, air fry again for 5-7 minutes or up to 10 if still frozen.

Air Fryer Chimichangas

Air Fryer Chimichangas are stuffed with chicken, beans, salsa and cheese and cooked right in the air fryer. These chimichangas have a crispy, brown outside and are such a simple meal.

Equipment

Ingredients

  • 1 cup chicken shredded
  • 1/2 cup black beans drained and rinsed
  • 1/4 cup salsa
  • 1/2 teaspoon cumin
  • 1/4 teaspoon oregano
  • 1/2 teaspoon chili powder
  • 3/4 cup Colby Jack cheese shredded
  • 4 flour tortillas soft taco size
  • cooking spray

Instructions

  • Preheat air fryer to 400º F
  • In a large bowl, combine the shredded chicken, black beans, salsa and spices. Mix until well combined.
  • Separate the chicken mixture evenly into the center of the four flour tortillas.
  • Top the chicken mixture with cheese.
  • Fold the ends of the tortilla into the center and then roll the other ends over to for the chimichanga.
  • Place into the basket of the air fryer and spray the tops with cooking spray oil.
  • Cook in the air fryer for 10-15 minutes, until golden brown and cooked through.

Notes

  • To store, place in an air tight container in the refrigerator for up to 4 days
  • Reheat in the air fryer for 5-7 minutes.
