Why Bake in a Cast Iron Skillet
Cast iron skillets are so easy to bake in, they make the best giant skillet cookies while also giving that rustic charm.
Cast iron skillets are for more than just making the perfect steak. They are great for making all kinds of simple cast iron desserts like this Cookies and Cream skillet cookie, a German chocolate skillet cookie, or even this peanut butter skillet cookie.
Cast iron is known for its even heat distribution, making the perfect crunchy outer crust and soft cookie center. Additionally, the beautiful non-stick surface means the cookie will easily be released from the pan and makes cleanup a breeze.

How to Make Cookies and Cream Cookie in a Skillet
Now that we are all drooling and can’t wait to smell this cookies and cream cookie baking in the oven, let’s walk through how to make this simple skillet cookie recipe.
- Make the cookie dough– in a mixing bowl, cream together the butter, brown sugar, sugar, eggs and vanilla. Mix with an electric mixer or by hand until the mixture is well combined and the sugars are all mixed in.
- Add the dry ingredients– sift the flour, baking soda, and salt into the butter mixture. I like to do this with a wire mesh strainer, it works great to add in the dry ingredients. Once these are all added, use the electric mixer or wooden spoon to make a soft cookie dough.
- Add in the chocolate cookie pieces– crush up the chocolate cookie sandwiches (I’m using Oreos) into small pieces and crumbs. This can just be done in a plastic bag using your hands or a rolling pin.
- Prepare for baking– press the cookie dough into the cast iron skillet. Make sure your skillet is well seasoned, or add some cooking spray or a thin layer of oil over the pan before adding the cookie dough.
- Bake– bake the skillet cookie in an oven heated to 325º F for 20-25 minutes, until the edges are browned and the center is cooked through. Test the center by poking a toothpick into the center of the cookie and it should come out clean.
How to Serve and Storage
Serve this warm Cookies and Cream cookie recipe right out of the cast iron skillet! The cookie will be soft and gooey, perfect for topping with a scoop of ice cream and a drizzle of chocolate syrup.
This cookie can be stored in an airtight container on the countertop for up to 3 days, it won’t be as good as the first day, but all the delicious flavors will be there. Do not store in the cast iron skillet.
