This made from scratch strawberry crisp is easy to make and only takes a few simple ingredients. This strawberry dessert is packed with a sweet, tangy flavor and topped with a crispy, butter oatmeal crumble that adds the perfect flavor and texture.

Here is everything you will need to gather to make this simple strawberry crisp:

Strawberry Base:

  • 6 cups strawberries fresh-diced into small pieces
  • 1/2 teaspoon cinnamon
  • 1/4 cup all purpose flour
  • 1 tablespoon lemon juice
  • 2 teaspoons lemon zest
  • 1 teaspoon vanilla
  • 1/4 cup sugar

Oatmeal Crumb Topping:

  • 1 cup rolled oats-regular oats, not quick oats
  • 3/4 cup butter melted
  • 1 cup all purpose flour
  • 3/4 cup brown sugar
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon salt

*Frozen strawberries can be used in place of the strawberries, or you can follow my recipe for a Mixed Berry Crisp using frozen berries.

How to Make Strawberry Oatmeal Crisp in a Cast Iron Skillet

Grease up your cast iron if it needs it and lets walk through how to make this simple strawberry crisp dessert recipe:

  1. Prepare Strawberry Base– dice strawberries into small, bite sized pieces. Place into the prepared cast iron skillet and add in the flour, cinnamon, lemon juice, lemon zest, vanilla and sugar. Stir in the skillet to coat the strawberries and combine the mixture.

  1. Prepare the Oatmeal Topping– in a small mixing bowl combine the rolled oats, flour, brown sugar, cinnamon, and salt. Pour over the melted butter and mix until everything is coated and the crumb mixture resembles coarse sand.

  1. Bake– Sprinkle the oatmeal crumb topping over the strawberry mixture and bake in an oven set to 375º F for 30-35 minutes. The crisp will be bubbly on the bottom and the oatmeal topping will be browned and crispy.

Serving Suggestions

  • Serve hot will a scoop of vanilla ice cream
  • Add a dollop of homemade whipped cream and a drizzle of chocolate or caramel sauce.
  • Eat it straight from the skillet!

Storage and Leftovers

This recipe is best served warm the day it is made, it can be stored to eat the next day.

Store leftovers in an airtight container in the refrigerator for 2 days, any longer and the crisp will be so mushy it is inedible.

I do not recommend making this ahead and serving later, this is best made and consumed the day it is made.

Do not store the crisp in the cast iron skillet.
