Vegetable Quesadillas with Black Beans are seriously so easy to whip up!! Got a starving kid that just walked in the door and needs food STAT? This is my go to! Actually, they can make this one all by themselves…it is that easy. Loaded with vegetables and black beans, it is a tasty, healthy meal.
Instructions
To make these simple easy cheesy vegetable black bean quesadillas you will start by prepping the vegetables. I like to use a variety of peppers when I make these, but if you don’t have any available, you can use either green, red, orange or yellow….make it how you like and use what you have.
Remove the stem and the seeds from the peppers and slice lengthwise into strips. Slice the onion in the same way. In a large skillet over medium high heat, heat a tablespoon of olive oil and sauté the peppers and onions until they are tender and the onion is translucent.
Once your vegetables are tender and roasted, you can add in the black beans and seasoning. I like to mix up my own seasoning mix, but you can just add a tablespoon of taco seasoning if you don’t have all of these spices on hand.
Taco Spice Blend
To make up a simple taco seasoning I like to combine the following:
- 1 tsp sea salt
- 1/2 tsp black pepper
- 1 tsp cumin
- 1 tsp oregano
- 1/2 tsp chili powder
- 1/2 tsp garlic powder
Mix these together, or sprinkle individually over the cooked vegetables and black beans. Stir until everything is evenly coated.
How to Assemble and Cook a Quesadilla
To assemble these simple vegetable quesadillas you will start with two flour or whole wheat tortillas. Brush olive oil on one side of the tortillas. Place one tortilla, oiled side down on a baking sheet. Top with the pepper and black bean mixture you just created and smother with cheese. You can use a combination of cheddar and monterey jack cheeses or just cheddar…choose your own cheese adventure at this point!
Place the remaining tortilla on top oiled side up. A quick way to spread the oil on both tortillas is to brush oil on one side of one tortilla and then place the other tortilla on top of that oil side and rub them together until both are oiled.
How to make Bulk Quesadillas
If you are like me, you have people that are hungry and think they might not make it if they don’t eat within 10 minutes of that first hunger pain!! You can easily make up a couple quesadillas at a time in the oven, so everyone will be happy!!
Preheat the oven to 400ºF, place 2 quesadillas on a baking sheet and cook in the center rack of the oven. No need to flip the quesadillas, they will get golden brown on both sides! Cook for about 10 minutes, until the cheese is melted and the tortilla is toasted. This is such an easy way to get dinner on the table or even feed a crowd of hangry humans!!!

Vegetable Black Bean Quesadilla Recipe
Ingredients
- 1 red pepper
- 1 yellow pepper
- 1 orange pepper
- 1/2 sweet onion
- 1 15.5 oz black beans
- 8 tortillas
- 1 tsp sea salt
- 1/2 tsp black pepper
- 1 tsp cumin
- 1 tsp oregano
- 1/2 tsp chili powder
- 1/2 tsp garlic powder
- 2 cups cheddar cheese, shredded
- 1 cup Monterey Jack Cheese, shredded
- 1 1/2 tbsp olive oil
Instructions
- Preheat oven to 400ºF
- Prepare peppers by removing stems and seeds. Slice the peppers lengthwise into strips.
- Slice the onion in half and remove the root and stem and thick skin. Slice lengthwise into strips.
- In a skillet over medium high heat pour in one tablespoon of olive oil and add peppers and onions. Cook until the peppers are tender and the onion is translucent. This will take about 3-5 minutes.
- Once the peppers and onions are cooked through add in the drained can of black beans. Add in the salt, pepper, cumin, oregano, chili powder and garlic powder. Stir to coat.
- With the remaining olive oil brush one side of two flour tortillas. Place the oiled side down onto a baking sheet. Top the tortilla with about one fourth of the pepper and black bean mixture. Add cheese and the other tortilla, oiled side up.
- Repeat until all the quesadillas are formed.
- Baked in the oven for 8-10 minutes, until the cheese is melted and the tortilla is golden brown.
