Simple Chicken Meal Idea

I don’t know about you, but I always have chicken on hand around here, so it is our go to for a lot of our meals. I usually buy a big bag of the frozen chicken breast or buy them fresh, separate them into bags and freeze. Chicken is so versatile, it can take on so many flavors or just be delicious on its own with a little salt and pepper.

This simple BBQ Chicken Bites meal is one that you can put together in under 30 minutes and have everyones taste buds happy and growling tummies satisfied. We love this dish, because a little bit, goes a long ways. This is delicious served alongside a vegetable like broccoli or even spaghetti squash, some of our favorites!

How to Make Oven Baked Barbecue Chicken Bites

This recipe takes just a few simple ingredients and steps to make up a super easy dinner, lunch or snack! To make this recipe you will start by prepping the chicken. Remove any skin, fat or bones if your chicken breasts are not already trimmed from the butcher.

Next, prepare a purple/red onion by slicing into about one inch pieces. I only used half of a large onion for this recipe, but if you are a huge onion fan, go a head and use the whole thing. My family usually just eats around them!!

In a large, oven safe skillet over high heat, pour in about a tablespoon of olive oil and allow to heat up. Add the chicken and turn down the heat to medium. Next, add the onion to the pan and continue to cook until the chicken is brown on all side and the onion is soft.

While the chicken is cooking you will prepare the barbecue sauce by mixing apple cider vinegar and pineapple juice to prepared barbecue sauce. Once the chicken is brown and onion cooked add in the barbecue sauce and pineapple chunks and stir to cover the chicken. The chicken does not need be cooked through at this point as it will continue to cook in the oven.

If you do not have an oven safe skillet, you can prepare the chicken in a skillet and then transfer to a 9×13 inch pan before placing in the oven.

Place the bbq chicken bites in a 400ºF oven and bake uncovered for 15-20 minutes, until chicken has cooked through and sauce has reduced. Serve over rice.

Can I use Chicken Thighs in Place of the Chicken Breasts?

Chicken thighs would work great in this oven baked barbecue chicken recipe. I would leave them whole if you are using thighs.

Ingredients Needed for Barbecue Chicken Bites

For this simple 30 minute, Barbecue Chicken Bites Recipe you will need the following:

  • 3 chicken breasts
  • 1 1/2 cups prepared barbecue sauce, I love the Whiskey Peach Barbecue Sauce from Hey Grill Hey!
  • 1/4 cup pineapple juice
  • 1 tbsp apple cider vinegar
  • 1 tsp garlic powder
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1/2 red onion
  • 1 tbsp olive oil
  • 1 2o ounce can pineapple chunks

Ingredients

  • 3 chicken breasts
  • 1 1/2 cup barbecue sauce
  • 1 20 oz pineapple chunks
  • 1/4 cup pineapple juice
  • 1 tbsp apple cider vinegar
  • 1 tsp garlic powder
  • 1 tsp sea salt
  • 1/2 tsp ground black pepper
  • 1 tbsp olive oil
  • 1/2 red onion

Instructions

  • Preheat oven to 400ºF
  • Prepare chicken and onion by slicing into one inch (bite sized) pieces.
  • Combine garlic powder, salt and pepper and liberally season chicken
  • Heat a large, oven safe, skillet over high heat. Add olive oil.
  • Place chicken and onion in heated pan and turn heat down to medium. Continue cooking until chicken is brown on all sides and onion is soft.
  • While the chicken is cooking combine the barbecue sauce, pineapple juice (take 1/4 cup of the juice from the can of pineapple chunks) and apple cider vinegar
  • Once the chicken is browned on all sides (it does not need to be cooked through) add in the barbecue sauce mixture and pineapple chunks, stir to coat.
  • Place in the preheated oven uncovered for 15-20 minutes, until the chicken is cooked through and the sauce has reduced down.
  • Remove from the oven and serve.
