Chicken Foil Dinners are a delicious and easy way to get dinner on the table. This Chicken Foil Dinner is loaded with potatoes, carrots, onions and celery. Seasoned with Italian seasoning and lemon for a burst of flavor.
Foil pack dinners are some of our favorite meals to make! They give everyone a chance to make it their own, by adding what veggies they prefer and the best part is….no dishes to clean up!!!!
To make these simple Chicken Foil Packs start by slicing up the veggies. I like to use small golden or red potatoes cut into quarters. You will want the potatoes small so they will be done cooking by the time the chicken has cooked through.
In a large bowl combine the vegetables, half of the olive oil, Italian seasoning, salt and pepper. Mix them around to make sure they are all seasoned evenly. Now the easy part of assembling the foil packs.
On four pieces of foil that has been sprayed with a non-stick cooking spray, put down a layer of the seasoned vegetables and then place the chicken breast on top. Drizzle the chicken with a little olive oil and season. Top with lemon slices and fold the foil by bringing up the two sides to the center and folding over until just above the chicken, fold up each end a few times to seal it all up so no juices will leak out while this is cooking.
Foil Dinners on the Grill
When we make foil dinners, we like to fire up the grill. Get the grill up to 400ºF before placing your nicely wrapped dinner packages on there. You do not need to flip or turn these, unless you have uneven heat distribution on your grill. If you have spots that are hotter than others, you will want to rotate these so they don’t burn on the bottoms.
These will cook for 20-30 minutes on the grill depending on the size of the chicken breast. The larger breasts took 30 minutes to cook, where the little ones only took about 25 minutes.
Foil Pack Dinners in the Oven
If you don’t have a grill, or maybe the weather is just not grilling weather, you can totally make these in the oven. Heat your oven to 400ºF and prepare the foil packs as directed. When making these in the oven I like to place them on a baking sheet before placing them in the oven, just in case they leak. They can make a real mess in the oven.
How to know when foil dinner is done
You will want your chicken to be cooked through and no longer pink in the middle. I use an instant read thermometer to make sure my chicken has cooked to 165ºF. If you have sliced them small enough, they will be ready after 20 minutes. If you want to carefully open the top of one pack to test the potatoes, do so with care as heat will escape and can burn.
Allow the foil packs to rest for a few minutes before serving.

Ingredients
- 4 chicken breasts
- 1 tbsp Italian seasoning
- 1 tbsp garlic powder
- 1 tsp sea salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 2 cups small potatoes
- 2 celery stalks, sliced
- 1 cup baby carrots, halved
- 1 onion, sliced
- 1 lemon, sliced
Instructions
- Heat grill to 400ºF. Prepare 4 squares of foil with non-stick cooking spray
- In a large bowl combine the onions, carrots, potatoes and celery. Drizzle with half of the olive oil, Italian seasoning, garlic powder, salt and pepper
- Place a layer or vegetables on each foil square. Add a chicken breast to square. Drizzle the chicken with olive oil and season by sprinkling with each of the seasonings. Place two slices of lemon on each chicken breast.
- Fold the foil square by pulling up each side and folding down in the center to just above the chicken. Fold up each side to secure the packets.
- Place on the hot grill and cook for 20-30 minutes until the potatoes are tender and the chicken reaches 165ºF.
