This dip is a treat to dig into with tortilla chips, roll into tortillas, scoop out with sliced peppers, or go crazy and eat it with a spoon!!

Ingredients in this Slow Cooker Cheese Dip Recipe

It only takes a few ingredients and comes together quick! Let’s break down what you need to make this cheese dip recipe a smashing hit every time!

  • Ground Beef: I like to use lean ground beef like 90% beef to 10% fat, it cuts down on having to drain off so much grease after cooking the beef
  • Onion– either a yellow or white onion diced into small pieces
  • Taco Seasoning: make your own, or pick up some of your favorite brand from the store
  • Rotel Tomatoes with Green Chiles: these add so much great flavor, you can make it more spicy by adding in the mild or hot cans
  • Black Beans: drain and rinse before adding these to the mix
  • Velveeta– you know that orange, squishy cheese that makes everything creamy and delicious
  • Monterey Jack Cheese: perfect cheese flavor addition to this dip, it is mild and smooth when melted
  • Evaporated Milk: this stuff is magic when used in a nacho cheese sauce, it makes it so creamy!

How to Make Ground Beef Queso Dip

This savory cheese dip recipe is almost as easy as my simple nacho cheese recipe. Just a few steps to walk through to get this into the slow cooker and let it do all the work. Here is what you need to do to make this loaded queso dip recipe.

  1. Cook the Beef and Onions– in a skillet over medium-high heat, brown the ground beef and the onions, until the onions are just tender.
  2. Prepare the Slow Cooker– add the ground beef and onions to the slow cooker and mix in the taco seasoning, Rotel tomatoes, black beans, Velveeta, Monterey Jack cheese, and evaporated milk.
  3. Cook the Queso– put the lid on the slow cooker and turn to low. Cook for 2-3 hours, until the cheese is all melted and bubbly.
  4. Serve and Enjoy!

  • Reheating, to reheat this beef queso, place into a microwave-safe bowl and microwave for 20-30 seconds, stir and microwave again in 30-second increments until heated through.

Ingredients

  • 1 pound ground beef
  • ½ cup onion diced
  • 1 packet taco seasoning
  • 2 cans Rotel tomatoes
  • 1 can black beans drained and rinsed
  • 16 ounce Velveeta cut into cubes
  • 1 cup Monterey Jack cheese shredded
  • ½ cup evaporated milk

Instructions

  • In a skillet over medium-high heat cook the ground beef and onions until the onions are tender.
  • Drain off any excess grease and place meat in the slow cooker.
  • Add in the taco seasoning, Rotel tomatoes, black beans, Velveeta, Monterey Jack Cheese and evaporated milk.
  • Cover and cook on low for 2-4 hours. Stir occasionally to help with even melting and flavor distribution.
  • Keep on warm while serving.
