This recipe for baked oatmeal is perfect for a filling breakfast because it is full of fiber and protein. You can substitute your favorite fruit into this recipe as well if you don’t have peaches.

How to make Baked Oatmeal

To make this simple breakfast start by combining all of the dry ingredients in a large mixing bowl. Whisk them together with a fork to make sure there are no clumps.

In a separate bowl, combine the eggs, milk, melted butter and vanilla. Stir to combine and add to the dry ingredients.

Now that the oatmeal and liquids are all combined, let them rest for 5 minutes to allow the oatmeal to soak up some of those flavors.

While the oatmeal sits for 5 minutes, turn the oven on to 350ºF. Peel and slice the peaches into small chunks.

Add the yellow peaches to the oatmeal mixture and stir to combine. Pour the oatmeal into a greased 8 x 8 inch square pan and bake uncovered for 35-40 minutes.

Can I use canned peaches in this recipe?

This is a perfect recipe to use with canned peaches. To use peaches from a can for this recipe. Remove the peaches from the can and drain off any juices before slicing and adding to the oatmeal.

Peach Baked Oatmeal

Ingredients

  • 3 cups regular oats
  • 2 tsp baking powder
  • 1 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
  • 1/4 cup brown sugar
  • 2 eggs
  • 2 cups milk
  • 2 tbsp butter, melted
  • 1 tsp vanilla
  • 1-2 yellow peaches, peeled and diced

Instructions

  • Preheat oven to 350º F. Grease an 8 x 8 inch baking dish
  • In a large mixing bowl whisk together the dry ingredients.
  • In a separate bowl combine the eggs, milk, butter and vanilla. Stir to combine.
  • Add the wet ingredients to the dry ingredients and stir. Fold in peaches and let stand 5 minutes.
  • Pour the oatmeal mixture into the greased 8 inch pan.
  • Bake uncovered 35-40 minutes, until golden brown on top.

Notes

Serve warm. This is also delicious served with milk and an additional sprinkling of cinnamon and brown sugar. Enjoy!

  1. This came out very tasty. I did use 2 flax eggs, since my visiting sister does not eggs. Everyone enjoyed their oatmeal breakfast. Thanks for sharing this recipe. For myself, I had used eggs, delicious both ways.
