Homemade Cocoa Brownies

We love making this recipe really any night of the week for a quick after dinner treat. Top with some ice cream and hot fudge while still warm for a super easy dessert. Ingredients Needed for Cocoa Powder Brownies
The ingredients for this basic brownie recipe are most likely items you already have on your shelves at home. For this recipe you will need:
- Oil– for this recipe I use Canola or Vegetable oil. A good substitute for either of these would be Avocado oil or even Coconut oil (this might affect flavor)
- Sugar– granulated sugar is all you need
- Eggs– large eggs are what the recipe calls for, be sure to have them at room temperature before baking. You can place in a bowl of hot water for 5 minutes to quickly bring them up in temperature
- Vanilla– pure vanilla not extract
- Flour– all purpose flour
- Cocoa Powder– unsweetened is best
- Salt– just a pinch to balance out the flavor
How to make Brownies with Cocoa Powder
Like I said, you only need one mixing bowl to make this simple brownie recipe. Start with a large mixing bowl and whisk together the oil and sugar until combined.
Next, add in the eggs and vanilla. Whisk, by hand, until the eggs are broken up and combined with the sugar and oil. Don’t over mix the batter at this point.
Place a mesh sifter over the top of the mixing bowl and add in the flour, cocoa powder and salt. Tap the side of the sifter to allow the dry ingredients to fall into the bowl with the wet ingredients.
This will insure that no the flour and cocoa powder are airy and without lumps before mixing them into the batter.
Use a spatula to fold the dry ingredients into the wet ingredients in the mixing bowl. Mix just until the ingredients are combined. Again, you don’t want to over mix your brownie batter, this will make it more cake like than fudgy.
Pour the batter into a greased 9 x 13 inch glass baking dish. I always bake brownies in a glass baking dish. You can use a metal baking pan, just be sure to check the brownies at about 20 minutes, to make sure the edges aren’t burning.
Bake the brownies in a 350º F oven for 25 minutes. Remove from the oven and allow to cool before slicing.
The best way to Slice Brownies
Don’t you hate it when you slice into brownies and they stick to the knife and then start falling apart? The best way that I have found to slice brownies is with a plastic knife, you know the kind you take on a picnic. I don’t the science behind it, but it works!!
How to Store Brownies
To store any leftover brownies, cover tightly with foil and store on the counter for up to 4 days.
Brownies can be kept fresh in the refrigerator in an air tight container for up to a week.
If you want to freeze brownies, wrap tightly in plastic wrap and then foil and freeze for up to 4 months. They can also be sliced, placed into a zip top bag and frozen.

Cocoa Powder Brownies
Ingredients
- 1 cup canola oil
- 2 cups sugar
- 4 eggs room temperature
- 1 teaspoon vanilla
- 1 1/2 cups flour
- 3/4 cup cocoa powder
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350º F and prepare a glass 9 x 13 inch baking dish with cooking spray
- In a large mixing bowl whisk together the oil and sugar
- Add in the eggs and vanilla and whisk until just combined
- Sift in the flour, cocoa powder and salt to the wet ingredients.
- Using a spatula, fold the dry ingredients into the wet ingredients until just combined
- Spread out evenly into the prepared baking dish
- Bake for 25 minutes. Allow to cool before slicing
Notes
- If baking in a metal baking pan, check the brownies at 20 minutes to be sure the edges aren’t burning. Take out of the oven if the brownies are done at this time.
- I just use Hershey’s unsweetened cocoa for this recipe, you can use Dutch processed or another kind as long as it is unsweetened
- If adding in additional ingredients, such as nuts, add into the wet ingredients before sifting in the dry ingredients
- Use a mesh strainer to easily sift the dry ingredients into the wet

no baking powder or soda?
No, this recipe does not have any baking powder or soda, which makes these brownies so fudgy. If you want the brownies to be more cake like, you can add 1/2 teaspoon of baking powder to the recipe.
I was looking for something rich and chocolatey just for me, and all I had was cocoa powder in the house. I scaled the recipe down to 4 (thanks for having that feature on your site), used a smaller Pyrex, and shaved a couple minutes off the cook time. It was a ~perfect~ brownie. And I know we’re not supposed to eat the raw batter (😖), but I did, and it was just as delicious as the finished confection. I also shouldn’t have eaten the whole thing myself (😖😖), but I did.
