Why I Recommend Baking Brookie Cookie in Cast Iron

Cast iron skillets are so easy to bake cookies in, I feel like there is a little fear of the unknown when using cast iron. But no need to fear, it’s really so easy, and skillet desserts are just the best.

Cast iron makes the best cakes and giant skillet cookies while also giving a touch of rustic charm.

Cast iron skillets are for more than just making a perfect steak. They are great for making all kinds of simple cast iron desserts like this skillet brookie, or even this peanut butter skillet cookie.

Cast iron is known for its even heat distribution, helping to make the perfect crunchy outer crust all over the outside of the cookie.

Additionally, the beautiful non-stick surface means the cookie will easily be released from the pan and makes cleanup a breeze. That might be the best part! If you need a how to clean cast iron refresher, check out my cast iron care post.

  • scoop 2 tablespoon sized cookie dough balls on top of the brownie batter. I like to do this just randomly, placing some close together or just by themselves.
  • use a spatula, knife, or spoon to spread out the cookie dough. Add as much, or as little of the cookie dough as you would like.

Bake the Skillet Brookie

  • bake the skillet brookie cookie in a 350º F oven for 20-25 minutes. I like to make this a scoopable skillet cookie, so you my guests can just scoop it out with a spoon, so the center will still be a little soft.
  • If you want to slice this into brookie bars, cook until the cookie is browned and the brownie edges are crisp.
