Baked Alaska is a super fun dessert that has a cake base, topped with strawberry slices, vanilla ice cream and toasted meringue. This Easy Baked Alaska Recipe has just a few ingredients and my simple steps will have the whole fam impressed with your dessert making skills.

Baked Alaska Recipe

This Baked Alaska Recipe makes 6 small cakes, perfect for treating the whole fam. If you are looking for something with a total ‘WOW’ factor, this is it! I will admit, this recipe seemed pretty intimidating at first, but I broke it down so really anyone can make this. 

I definitely took a few shortcuts when making this recipe to make it a little more easy and take less time. These tricks work great and do not make this Baked Alaska Dessert taste any less delicious. Once you try these, you will wonder how you have lived this long without them.

How to make Easy Baked Alaska

  • Start by placing sliced strawberries into store bought angel food cake rounds.
  • Using a large cookie/ice cream scoop, place a scoop of vanilla ice cream on top of the strawberries and angel food cake
  • Place this into the freezer to keep the ice cream frozen while you make the meringue

Meringue for Baked Alaska

To make the meringue for this Baked Alaska, follow these simple steps:

  • Place 4 egg whites into the bowl of a stand mixer, or into a large mixing bowl if you are using a hand mixer
  • Add in 1/4 tsp cream of tartar
  • Whisk the eggs on medium speed until the eggs are foamy, as pictured above

  • Start adding the sugar to the egg whites, 1 teaspoon at a time
  • Turn up the speed of the mixer to high and allow it to beat the eggs as you slowly add in the sugar
  • Whisk the egg whites until they are thick and easily form stiff peaks. This can take a while, mine took about 8 minutes.
  • Add the vanilla and mix for a minute more to combine

  • Place the meringue into a pipping bag fitted with a star tip. Quickly pipe the outside of the frozen cakes and ice cream that have been in the freezer. 
  • Place the Baked Alaska cakes back into the freezer and freeze for at least an hour to allow the meringue to freeze.

  • Using a food torch, brown the meringue by holding the flame near the meringue and moving quickly back and forth, until golden brown. 
    • If you don’t own a torch, you can place the Baked Alaska in the oven, under the broil for just a few minutes until golden. If you are doing this method, keep a close eye on it so it doesn’t melt
  • Keep in the freezer until ready to serve

Tips for making Baked Alaska

These are a few tricks I found that helped making this special treat a little bit easier. 

  1. Use store bought cake. These are the perfect size for making individual cakes and for scooping a simple serving size for each person. Also, this cut down on the time it makes to assemble these cakes, but by all means, make your own cake if you prefer. 
  2. Make sure you freeze the cakes after each step. This helps keep everything solid, so they ice cream is not melting causing the meringue to slide off of the ice cream….
  3. Whisk the meringue until it is stiff. It feels like you are beating it for a long time, and you are, but don’t quit too soon or your meringue will be runny and difficult to pipe onto the ice cream. 
  4. Freeze the meringue before torching. If you skip this step, you will have a puddle of meringue and ice cream.

Baked Alaska Recipe

Baked Alaska is layers of cake, fresh cut strawberries and vanilla ice cream topped with a toasted vanilla meringue.

Ingredients

  • 6 angel food cake cups
  • 1 cup strawberries, sliced
  • 3 cups vanilla ice cream

Meringue Ingredients

  • 4 egg whites
  • 1/4 tsp cream of tartar
  • 1 cup sugar
  • 1 tsp vanilla

Instructions

  • Place dessert cups on a parchment lined pan/plate that will fit into your freezer.
  • Fill the dessert cups with sliced strawberries and top with a scoop of vanilla ice cream. Place into the freezer while you prepare the meringue.

Meringue Instructions

  • Pour the egg whites into the bowl of a stand mixer and add in the cream of tartar.
  • Whisk the egg whites on medium until they are foamy.
  • Increase the speed and add in the sugar 1 teaspoon at a time.
  • Continue to whisk the egg whites until they form stiff peaks, an additional 5-10 minutes.
  • Add in the vanilla and mix for an additional minute.
  • Place the meringue into a piping bag fitted with a star attachment. Pipe the meringue around the outside of the frozen ice cream and cakes.
  • Put the Baked Alaska cakes back into the freezer for at least another hour, until the meringue is frozen.
  • Torch the meringue with a food torch until it is golden brown on the outside just before serving.
