Brownie Crisps are so easy to make at home and are like having all edge brownies. They are crispy, chocolatey and delicious. These brownie thins take just 8 ingredients to make and are perfect for satisfying your sweet tooth!

Brownie Crisps

Brownie crisps are my own take on the Costco Brownie Brittle, I love munching on that stuff and when I figured out how easy it is to make at home, we always have it on hand.

You are going to love how easy this recipe is to make and it does make a large batch of brownie crisps, so feel free to share. Unlike a traditional fudgy brownie, these are more like a sweet chocolate cracker. We also love breaking these thin brownies on top of Greek yogurt or even ice cream for a simple treat.

How to Make Brownie Crisp Recipe

Let’s walk through the simple steps to make this easy crispy brownie recipe. The full recipe details can be found at the bottom of this page in the recipe card.

  1. Combine egg whites and sugar– start with a large mixing bowl and combine both the egg whites and sugar. Whisk together until the eggs are foamy and the sugar is completely dissolved. This can be done with an electric mixer or by hand.
  2. Whisk together dry ingredients- in a separate mixing bowl, whisk together the flour, cocoa powder, baking powder, and salt.

  1. Mix the batter– combine the dry ingredients with the egg mixture. Add in the oil and 1/2 cup of the chocolate chips and stir until everything is really well combined. It will look like chunky brownie batter at this point.

  1. Pour batter onto the baking sheet– line a baking sheet with parchment paper. Spray the pan with cooking spray if needed to help the parchment paper lay flat on the pan. Pour the brownie crisp batter onto the parchment paper and spread evenly with a spatula. Sprinkle the remaining chocolate chips on top of the batter.
  2. Bake and Break– bake the brownie thins for 25-30 minutes at 300º F, remove from the oven, and use a knife to make lines in the batter in the shape of squares. Bake for an additional 10 minutes. Cool completely before breaking into squares.

Storage

Store the brownie crisp in an air tight container or zip top bag on the counter for up to one week. This can also be placed into the freezer and stored for up to 3 months.

Ingredients

  • 3 egg whites
  • ½ cup sugar
  • ½ cup flour
  • 2 ½ tablespoons cocoa powder
  • ¼ teaspoon salt
  • ¼ teaspoon baking powder
  • ¼ cup vegetable oil
  • ¾ cup semi-sweet chocolate chips divided

Instructions

  • Preheat oven to 300 ℉ and line a half baking sheet with parchment paper.
  • In a large mixing bowl whisk together the egg whites and sugar until foamy. The sugar should be completely dissolved.
  • In a separate bowl, whisk together the flour, cocoa powder, salt, and baking powder. Slowly add the dry ingredients to the egg mixture and stir to combine.
  • Add in the oil and stir until just combined and smooth. Fold in a half cup of the chocolate chips.
  • Spread the batter in the prepared pan evenly. Sprinkle the remaining chocolate chips over the top.
  • Bake for 25-30 minutes. Remove from the oven and slice into squares as desired. Put back into the oven for an additional 10 minutes.
  • Cool completely before breaking into squares.
  • Store for up to 1 week on the counter in an air tight container.
