How to Make Cheesy Cauliflower Soup
- Sauté the onions: start by melting some butter in a large pot over medium high heat, then saute the diced onion in the butter until it is soft and transparent.
- Cook the cauliflower: Add in the chopped up cauliflower and chicken stock, cover the pot and cook until the cauliflower is tender. The smaller the pieces of cauliflower, the quicker it will cook.

- Blend until smooth: Using an immersion blender, blend the soup until smooth and no lumps remain. This is the immersion blender I own and use all the time in soups like this Cauliflower Cheese or even this Tomato Soup Recipe.
⭐️ TIP: If you don’t own an immersion blender, you can blend the soup in a blender. Just be sure to leave the little spout open since the soup will be hot and the steam can build up inside the blender. Pour the soup back into the pot and follow the remaining instructions in the recipe.

- Thicken the soup: make it creamy, whisk together the flour and milk until smooth. Pour into the dutch oven with the cauliflower and bring up to a boil, then turn down the heat to medium low. Continue to stir the soup, scraping down the sides and the bottom as you stir, until the soup has thickened.
- Add the cheese: Season with Worcestershire, salt and pepper. Turn the heat off and stir in the grated sharp cheddar cheese, stir until smooth.

Cauliflower Cheese Soup
Ingredients
- 1 cup diced onion
- 1/2 cup butter
- 1 cauliflower, chopped into small pieces
- 4 cups chicken broth
- 2 cups milk
- 1/2 cup flour
- 2 cups sharp cheddar cheese, shredded
- 1 tsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Melt butter in a large 6 quart pot over medium heat. Add in chopped onion and cook and stir until the onion is soft and translucent
- Add in the chopped cauliflower and pour in the chicken stock, bring the soup up to a boil and cover with a lid. Allow to cook until the cauliflower is soft, about 10 minutes, stirring occasionally.
- Using an immersion blender, blend the soup until the soup is smooth with no more large pieces of cauliflower or onion.
- Combine the milk and flour in a separate bowl until smooth. Pour into the soup and bring up to a boil, turn down the heat to a simmer and stir until the soup has thickened.
- Season with the Worcestershire, salt and black pepper.
- Turn off the heat and add in the cheese, stir until the cheese is melted

- If you don’t have an immersion blender, the soup can be transferred to a blender and then blended until smooth. Be sure to leave a little opening in the blender to allow steam to escape.
