This is the quickest and easiest way to get your chocolate chip cookie fix!! I personally love cookies in bar form!! The chocolate is so thick and rich and the crust is flaky and butter…….perfection!!! This chocolate chip cookie bar recipe is made in a 9 x 13 inch pan, so plenty to feed a crowd!
Another add bonus of the bar cookie is they are nearly impossible to mess up!! You won’t have to worry about flat cookies with this recipe!! They come out perfect every time!!
Ingredients for Chocolate Chip Cookie Bars
- 12 tablespoons butter, melted then cooled
- 1 cup brown sugar
- 1/2 cup white sugar
- 1 large egg
- 1 egg yolk
- 2 teaspoons vanilla
- 2 cups plus 2 tablespoons all purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/4 teaspoon cinnamon
- 1 1/4 cup chocolate chips
How to Make Cookie Bars
These chocolate chip cookie bars are simple to make and come together in just a few minutes!! You’ll have these ready before the oven is even up to temperature! I recommend preparing these with a stand mixer or hand mixer with a large mixing bowl.
Start by creaming together the melted butter and sugars, add in the eggs and vanilla and mix until well combined. In a separate bowl combine the flour, baking soda, salt and cinnamon, whisk together and add to the butter mixture.
Continue mixing until the dough pulls away from the sides of the mixing bowl and easily forms a ball. Add in the chocolate chips and mix until they are incorporated.
Spread the dough into a glass 9 x 13 inch pan using the back of a wooden spoon or your hands. Spread it until it is even. Bake in a 375ºF oven for 20-25 minutes until golden brown.
How to Store Cookie Bars
These Cookie Bars can be cooled and stored in the same pan you cook them in if they are going to be eaten within a day or two. Cover them tightly with foil and store on a countertop. If you are going to keep them longer, slice and store in an airtight container.
They can also be frozen. I like to slice them first before freezing and store in large zip top bags. Try to avoid stacking them on top of each other so they don’t freeze together.
How Long do Cookie Bars Last
If properly stored, these can last at room temperature for up to five days, though they will definitely be devoured before then. If you are freezing them, they are good for up to three months. Around here, they are gone within 24 hours…..we like cookies!!
