Ingredients for this Skillet Cookie Recipe

This is all you will need to make this peanut butter cookie (or maybe I should say pizookie) magic happen in your own kitchen:

  • 1/2 cup butter
  • 3/4 cup smooth peanut butter
  • 1/2 cup sugar
  • 1/2 cup light brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda

How to Make a Cookie in a Skillet

We’ve got our ingredients all put together, we are ready to make a skillet cookie. Let’s walk through the simple steps to make this perfect every time.

  1. Cream butter, peanut butter, and sugars together– to start, get a large mixing bowl and mix together the softened butter, peanut butter, sugar, brown sugar, eggs, and vanilla. I just put everything into one bowl and use my electric mixer to beat together until well combined and the mixture is just a bit fluffy. This takes 1-2 minutes.

  1. Add dry ingredients– to the same bowl add in the flour, salt, and baking soda. Use your mixer or strong hand and a spoon, to incorporate the dry ingredients into the butter mixture until a soft dough is formed.

  1. Prepare for baking– press the cookie dough evenly into a greased cast iron skillet.
  2. Bake– the skillet cookie will bake in a 350º F oven for 20-25 minutes. The edges should be golden brown and the center still be a little soft, not giggly.

How to Serve a Skillet Cookie

I wouldn’t judge if you just dug right into this cookie with a spoon, it’s my favorite way to eat it! However, if you are planning on sharing, scoop out individual servings or slice like a pie.

We like to top this with a scoop or two of vanilla or even chocolate ice cream. Lastly, top it all off with some warm peanut butter. Just place 1/4 cup of smooth peanut butter into the microwave for 30 seconds and drizzle over your cookie.

Leftovers and Storage

After everyone has had enough of the skillet cookie, take it out of the cast iron skillet and place it into an air-tight zip-top bag. Store on the countertop for up to 3 days.

This skillet cookie can also be frozen. Slice it into individual servings place it into a freezer bag or air-tight container and freeze for up to 3 months.

Ingredients

  • 1/2 cup butter softened
  • 3/4 cup peanut butter smooth
  • 1/2 cup sugar
  • 1/2 cup light brown sugar

Instructions

  • Preheat oven to 350º F. Grease a 10.25 inch cast iron skillet
  • In a large mixing bowl or stand mixer, mix together softened butter, peanut butter, sugar, brown sugar, eggs, and vanilla until fluffy, 1-2 minutes.
  • Add the flour, salt, and baking soda, and mix until a soft dough is formed.
  • Press the peanut butter cookie dough into the prepared cast iron skillet.
