Why I Recommend Baking Brookies in a Cast Iron Skillet
Cast iron skillets are so easy to bake cookies in, I feel like there is a little fear of the unknown when using cast iron. But no need to fear, it’s really so easy, and skillet desserts are just the best.
Cast iron makes the best cakes and giant skillet cookies while also giving a touch of rustic charm.
Cast iron skillets are for more than just making a perfect steak. They are great for making all kinds of simple cast iron desserts like this skillet brookie, or even this peanut butter skillet cookie.
Cast iron is known for its even heat distribution, helping to make the perfect crunchy outer crust all over the outside of the cookie.
Additionally, the beautiful non-stick surface means the cookie will easily be released from the pan and makes cleanup a breeze. That might be the best part!

How to Make Skillet Brookies
Make the Brownie Batter
- in a mixing bowl combine the very soft (even melted butter will work), sugar, eggs and vanilla together until well mixed.
- add the cocoa, flour, and salt to the butter, sugar mixture and mix until combined together.
- melt the chocolate chips in a microwave safe bowl for about 40 seconds, stir until smooth, then pour and mix into the brownie batter. Mix quickly so the chocolate doesn’t harden.
Make the Chocolate Chip Cookie Dough
- just like the brownie batter, start by creaming together the softened butter, sugar, brown sugar, egg, and vanilla until combined.
- to the same bowl add in the flour, baking powder, baking soda, and salt. Continue to mix by hand or with an electric blender until a soft dough is formed.
- mix in the chocolate chips, making sure to scrape the sides and bottom of the bowl to incorporate all of the ingredients.
Scoop the Dough Into The Cast Iron Skillet
- make sure your cast iron skillet is greased before scooping the dough into the skillet. Scoop equal sized portions of cookie dough and brownie batter randomly in the bottom of the skillet.
- use a spatula or spoon to spread out the dough, in the bottom of the pan. Add any remaining dough on top of the bottom layer.
Bake the Skillet Brookie
- bake the skillet brookie in a 350º F oven for 35-40 minutes. The brookie is done when a toothpick inserted in the center comes out clean and the cookie does not jiggle when then pan you shake the pan.
How to Serve Skillet Brookie
Eat it straight from the skillet, I won’t judge! But, if you are serving this skillet dessert to friends and family, add a scoop of vanilla ice cream, your favorite toppings, or just a dollop of whipped cream for a simple treat.
Leftovers and Storage
If you do happen to have some leftover cast iron skillet brookie, take it out of the skillet and store in an air tight container or zip top bag on the counter for up to 3 days.
This skillet cookie can also be frozen; freeze slices or the whole cookie out of the skillet in a freezer bag for up to 3 months.
