- Strawberries
- Mandarin Oranges
- Red Onion
- Mozzarella Cheese
- Sliced Almonds
- Brown Sugar
Ingredients for Poppy seed Salad Dressing
- Olive Oil
- Vinegar
- Sugar
- Ground Mustard
- Salt
- Onion Powder
- Poppy seeds
Strawberry Spinach Salad Directions
To make this simple and tasty salad, in a large salad bowl combine clean spinach leaves, sliced strawberries, drained mandarin oranges, sliced red onion and shredded mozzarella cheese.
For the toasted almonds; place the sliced almonds in a skillet over medium high heat. Add brown sugar and stir, stir, stir, until the brown sugar melts and coats toasted almonds. Remove from heat quickly as these can go from toasted to burnt really fast.
For the poppy seed dressing:
In a jar with a lid or large bowl combine the ingredients for the poppy seed salad dressing. Place the lid on the far and shake the dressing for 2-3 minutes until the dressing becomes thickened and all of the sugar is dissolved.
Pour half of the dressing over the salad and toss to coat. Add more dressing as needed. Store any left over dressing in the refrigerator.
How to make Spinach and Strawberry Salad Ahead
To make this delicious salad ahead of time, combine all of the ingredients of the salad. Make the dressing separately. Store in the refrigerator until you are ready to serve.
Just before serving, pour the salad dressing over the salad and toss to coat. Do not add the dressing before serving as the dressing will begin to wilt the spinach so this is best prepared right before serving.

Ingredients
- 10 oz spinach
- 1 pint strawberries, sliced
- 1 10.5 oz mandarin oranges, drained
- 1/4 cup red onion, thinly sliced
- 1/2 cup mozzarella cheese
- 1/2 cup sliced almonds
- 1 tbsp brown sugar
Poppy seed salad dressing
- 3/4 cup olive oil
- 1/3 cup white vinegar
- 1/4 cup sugar
- 2 tsp ground mustard
- 1 tsp salt
- 1 tbsp onion powder
- 1 tsp poppy seeds
Instructions
- Combine the spinach, strawberries, mandarin oranges, mozzarella and red onions in a large salad bowl.
- Toast the almonds in a skillet over medium high heat. Add the brown sugar to the pan with the almonds and stir and cook until the brown sugar melts and coats the almonds. Remove from the pan and allow to cool before adding to the salad.
Poppy Seed Salad Dressing
- Combine the salad dressing ingredients in a jar with a lid. Shake for 2-3 minutes, until the sugar is dissolved and ingredients combined.
- Pour half of the dressing over the salad ingredients just before serving. Toss to coat, add more dressing as needed.

Love this recipe. I made it for a bookclub last week and added shredded rotisserie chicken and omitted the oranges this time. I like to soak the onion in either sugar water or some of the dressing vinegar before adding so they don’t have quite as much bite. Have you ever done that Sarah?
