Personally, I love any leftover turkey or even chicken for delicious recipes like this turkey salad. This recipe totally is the answer to the ‘What should I do with all this leftover turkey?’ question. Thanksgiving is the perfect time to whip this recipe up.

It’s always the day after when you’ve spent the whole previous day cooking and the night shopping that the last thing you want to do is cook more food. So pull out that left over turkey, throw in a few ingredients and serve this on leftover rolls, croissants, crackers or even on lettuce as a salad.

How to make Turkey Salad Sandwiches

This leftover turkey recipe for turkey salad really just takes a few ingredients and a few minutes. To make this simple recipe:

  1. Chop or shred the turkey into small cubes
  2. Place the turkey into a mixing bowl
  3. Add in mayo or Miracle Whip- whichever your family prefers and lemon juice
  4. Add in dried cranberries, sliced cucumber, sliced green onions and chopped pecans
  5. Season with a little salt and pepper, to taste
  6. Stir to combine and coat everything in mayo
  7. Serve on sliced croissants, rolls, crackers or lettuce

Can Turkey Salad be made ahead?

This turkey (or chicken) salad can be made at least 3 days ahead. If you are making this ahead be sure to store in an air tight container and keep in the refrigerator until you are ready to serve. 

How long does Turkey Salad last in the fridge?

This turkey salad will be good for up to 4 days if stored in the fridge. 

Can I freeze Turkey Salad?

The answer is, yes, but I wouldn’t. The mayo tends to get watery when frozen. If you are thinking you want this for a later date, I would freeze the chopped turkey and then they day before you want to make this salad, place the turkey in the fridge to thaw and then throw the salad together when you are ready to serve it.

Ingredients

  • 3 cup chopped turkey
  • 3/4 cup Mayonnaise or Miracle Whip
  • 1 tablespoon lemon juice
  • 1/2 cup dried cranberries
  • 1/2 cup pecans, chopped
  • 1/2 cup celery, sliced
  • 1/4 cup green onions
  • salt and pepper to taste

Instructions

  • In a mixing bowl combine chopped turkey, mayonnaise, lemon juice, dried cranberries, pecans, celery and green onions.
  • Season with salt and pepper and stir to combine and coat everything in mayonnaise.

Notes

  • Serve on sliced croissants or rolls, on crackers or even lettuce. 
  • You can use light mayo or olive oil mayo if you prefer.
