This recipe for cheesy cauliflower rice has easily become one of our favorite side dish recipes. You know it’s a keeper when the kids request you make this recipe over and over.
Recipes with cauliflower or even broccoli are always hit or miss, so when you find one the whole fam loves, you’ve got to hang onto it!!
How to make Cauliflower Rice
Okay, let’s first talk about how to make cauliflower rice at home, if you aren’t going to be purchasing it pre-made.
To make cauliflower rice, take a head of cauliflower, remove and leaves, slice it in half, and remove the steam from the bottom. To easily remove the stem, I like to cut the stem in a triangle and then it will slide easily from the cauliflower.
Break the cauliflower into smaller florets and place into a food processor. Pulse until the cauliflower is chopped into small, rice-like pieces.
You could also just use a grater or sharp knife to finely chop the cauliflower if you don’t own a food processor.
Cheesy Rice Cauliflower Ingredients
There are just a few simple key ingredients that are involved with making this cauliflower rice recipe, most likely items you already have in your home. To make this recipe you will need the following:
- cauliflower rice– obviously. Can be made fresh, or buy frozen already made into rice shaped.
- butter– easy way to add flavor and creaminess. Salted or unsalted is fine for this recipe
- milk– any variety will work here
- spices:
- salt and black pepper
- onion powder
- garlic powder
- dried parsley

Directions to make Cheesy Rice Cauliflower
To make cheesy cauliflower rice, start by cooking the riced cauliflower in a large pan over medium heat. Melt the butter in the pan and add the cauliflower.
Add the spices at this time and stir and cook until the cauliflower is heated through, about 2-3 minutes. It’s even delicious at this point!
Next, add in the milk and bring to a boil. Then, turn down the heat and stir in the cheese until it is all melted and well combined with the cauliflower.
That’s it, this is such a super easy recipe to make that will have the whole fam gobbling up their veggies.

Cheesy Cauliflower Rice
Ingredients
- 1.5 cups cauliflower riced
- 1 tablespoon butter
- 1/2 teaspoon salt or to taste
- 1/4 teaspoon black pepper or to taste
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon parsley dried
- 1/4 cup milk
- 1.5 cups sharp cheddar cheese grated
Instructions
- Melt the butter in a large skillet over medium heat, add in rice cauliflower, salt, pepper, onion powder and garlic powder.
- Cook and stir for 2-3 minutes until heated through and soft
- Pour in the milk and bring to a boil. Turn down the heat to low and add in the cheese. Stir until melted and combined.
- Remove from the heat and serve.
