This easy dinner loaded with garden vegetables is such a time saver. Everything is cooked in the same pan, saving you from doing a ton of dishes, and it is ready in less than 20 minutes. The burst tomatoes make the sauce for this pasta dish so the flavors are fresh and refreshing.
Fresh Tomato Pasta Sauce
Using fresh tomatoes adds so much flavor to this pasta sauce. For this recipe I usually use cherry tomatoes or grape tomatoes. You can find the multi-colored tomatoes as well to add a little pop of color. As the tomatoes are cooked in the pan, they begin to wilt and then bursts adding their juices and flavor to this simple dish.
How to make Fresh Tomato Pasta
To make this healthy one pan meal, start with a little olive oil in the pan over medium high heat. Add in the sliced zucchini, onions and tomatoes. Cook, stirring frequently for 2-3 minutes until the zucchini and onions are tender and the tomatoes are heated through.
Season the vegetables with salt, pepper and Italian Seasonings. Add in the garlic and cook for 30 seconds until the garlic becomes fragrant.
Pour in the chicken broth and the pasta. Bring to a boil and cover with a lid. Turn the heat down to a simmer and let the dish simmer for 10 minutes.
After 10 minutes, remove the lid and give the dish a stir. Continue to cook and stir until the pasta is cooked through.
Just before serving add fresh basil and grated parmesan cheese.

Cherry or Grape Tomato Pasta
Ingredients
- 1 tbsp olive oil
- 1 zucchini, sliced
- 1 small yellow onion, diced
- 1 pint cherry or grape tomatoes
- 2 tbsp garlic, minced
- 1 1/2 tsp salt (or to taste)
- 1/2 tsp black pepper
- 3 1/2 cups chicken broth
- 1 pound penne pasta
- 1/2 cup parmesan cheese, grated
- 2 tbsp fresh basil, sliced
Instructions
- In a pot over medium high heat, pour in the olive oil. Add in the diced onions, sliced zucchini and tomatoes. Cook and stir 3 minutes, until onion and zucchini have softened.
- Add in the minced garlic and cook until fragrant. Season with salt, pepper and Italian Seasonings.
- Pour in the chicken broth and pasta, bring to a boil.
- Place a lid on the pan and turn down the heat to a simmer. Allow to simmer for 10 minutes, stirring occasionally.
- After 10 minutes, remove the lid, check the pasta and continue to cook until the pasta is cooked through and the sauce has thickened.
- Top with fresh basil and parmesan just before serving.
