I’m not kidding when I say we devour these chicken lettuce wraps (or lettuce boats) and don’t feel bad about it. I mean, it’s just chicken and lettuce, right?

Even my kids love this meal, which can always be tricky, so when I find something they like, I call it a win!

Lettuce chicken wraps can be made as an appetizer or make it into a meal and serve with coconut rice, roasted sweet potatoes, or garlic parmesan green beans.

It’s almost just as easy as chicken wrapped in lettuce, you will need just a few additional ingredients to make these super tasty. Here are some of the key items you will need:

  • Ground Chicken– this can be found in the meat section of your local grocery store or ask your butcher
  • Green Onions– this recipe uses both the white and green parts of the green onion
  • Water Chestnuts– find these in a can in the Asian foods aisle of you local store
  • Lettuce Leaves– butter lettuce or romaine hearts
  • For the Sauce
    • Hoisin
    • Garlic
    • Ginger
    • Soy Sauce
    • Salt and Black Pepper
    • Red Pepper Flakes
    • Sesame Oil
    • Rice Vinegar

How to Make Lettuce Wraps

  1. Cook the Ground Chicken– start by adding some cooking oil to a large skillet over medium-high heat. Add in the ground chicken and the white part of the green onions. Cook and stir until the chicken is cooked through.
  2. Season the Chicken– add the minced garlic and ginger to the pan with the chicken and cook and stir for 30 seconds until fragrant. Add in the remaining sauce ingredients, water chestnuts, and green onions.
  3. Enjoy– Spoon the chicken into the center of clean lettuce leaves

Quick Tip

Adjust the level of spiciness by omitting the crushed red pepper flakes, or if you want it more spicy, add more and a little splash of Sriracha.

  • How to make ground chicken– can’t find any ground chicken at the store, or maybe you just don’t want to go to the store. Make ground chicken at home by placing chicken breasts into a food processor and chop until it is in pea-sized pieces. This is so easy to do and can also save you some money by making it on your own.
  • Best lettuce for lettuce wraps– butter lettuce is a soft lettuce that folds up nicely with the ground chicken mixture inside. Another lettuce leaf we like to use is romaine hearts (there are small heads of romaine at Costco that work great in this recipe). Iceberg lettuce leaves can also be used or even green leafy lettuce.
  • Can these be made ahead– this recipe is perfect for meal prep or making in advance of a meal. Make the chicken and store it in the refrigerator for up to 3 days.
  • How to store leftovers– store leftovers in an air-tight container in the refrigerator for up to 3 days. This can also be frozen for up to 3 months.
  • How to reheat chicken for lettuce wraps– place the ground chicken mixture into the microwave and cook in 30-second increments until heated through. This can also be reheated in a pan over medium heat, stirring constantly.

Ground Chicken Lettuce Wraps

  • 1 pound ground chicken
  • 1 tablespoon cooking oil
  • 3 green onions separated into whites and greens, and sliced
  • ¼ cup hoisin sauce
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • 3 tablespoons soy sauce
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes
  • 1 teaspoon sesame oil
  • 1 teaspoon rice vinegar
  • 8 ounces water chestnuts chopped
  • 8 butter lettuce leaves


  • In a large skillet over medium-high heat. Heat oil then add in chicken and whites of the green onions.
  • Cook and stir until chicken is browned and cooked through, about 7 minutes
  • Add in the garlic and ginger, and cook for 30 seconds.
  • Add in the hoisin, soy sauce, salt, black pepper, red pepper flakes, sesame oil and rice vinegar. Stir in the chopped water chestnuts. Add in the green onions.
  • Scoop into lettuce leaves to serve.
