This sandwich cookie recipe is so easy to make, start with a simple 3 ingredient peanut butter cookie, then add a layer of microwave ganache frosting.

I just love this easy sandwich cookie recipe because it comes together quick, takes just a few minutes to bake and chill and then you are in cookie bliss.

These cookies are definitely a rich, sweet treat, so be sure to have plenty of milk on hand to add to this indulgent cookie devouring experience.

How to Make Peanut Butter Sandwich Cookies

Let’s go over the steps to making this super simple peanut butter cookie recipe with microwave ganache. I’ll give you a few more details here, or you can head down to the recipe card at the bottom of this post for the full recipe ingredients and instructions.

To start, make the peanut butter cookie. This is my favorite way to make peanut butter cookies, this recipe only takes 3 ingredients and 7-10 minutes to cook.

To make the peanut butter cookie dough, in a medium sized mixing bowl, combine peanut butter, sugar and one egg.

To mix the dough, I like to use and electric mixer, it just comes together so quickly. If you would like, this cookie batter can be mixed by hand, just make sure it is well combined.

Scoop the cookies out onto a parchment lined baking sheet. I like to use a small cookie scoop to make sure the cookies are all the same size. You do not need to use parchment on the pan if you don’t own any, just place the cookie dough directly onto the cookie sheet.

Once you have placed the balls of cookie dough onto the pan, dip a fork into some sugar and press down the cookies in a criss cross pattern.

Just press down one way and then cross the cookie in the other direction. The sugar is optional, I just prefer to press them this way.

Bake the cookies for 7-10 minutes, until they are slightly golden on the edges. I like my cookies a little on the crispy side, so I will bake for the full 10 minutes.

Once they are done baking, allow to cool completely before frosting.

Microwave Chocolate Ganache

For this simple ganache recipe, you will only need 2 ingredients. To make microwave ganache, place 8 ounces of semi-sweet chocolate chips and 1/2 cup heavy cream into a microwave safe bowl.

Microwave for 1 minute and 10 seconds.

Stir the chocolate and cream together until smooth. I like to allow the ganache to cool so it is a little thicker and will spread more like frosting when sandwiching it between the cookies.

The cookies are easier to make if the cookies are cool. If the are still too warm, the chocolate will just melt out.

I have placed the cookies into the freezer for about 10 minutes in the past, just to make sure the chocolate will set well between the cookies.

How much chocolate ganache you put between the cookies is really up to you. The ganache is really rich, so I usually only put about one tablespoon between the 2 cookies, but if you are feeling it, go ahead and put more!!
