Oatmeal Cake

This recipe for Oatmeal Cake has been in our family for years. I have many memories of my mother making this cake for our family growing up. I remember the warm cake with the crunchy, delicious coconut topping. This cake is one that will be part of the family for years, it is a tradition!

Oatmeal Cake is perfect for taking along to family gatherings, neighborhood get togethers and so much more. This makes a big pan of cake that can serve up to 24 people. I’m sure you will be giving out the recipe when you serve this simple oatmeal cake.

Oatmeal Cake

Oatmeal Cake is a delicious, moist cake made with oatmeal and topped with a crunchy coconut, pecan topping!

Ingredients

  • 1 1/4 cup boiling water
  • 1 cup oats
  • 1/2 cup butter
  • 2 eggs
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1 1/3 cup all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt

Coconut Pecan Topping

  • 1/4 cup butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup milk
  • 1 tsp vanilla
  • 1/2 cup chopped pecans
  • 1 cup shredded coconut

Instructions

  • Combine the boiling water, oats and butter and allow to cool to room temperature.
  • In a large mixing bowl cream together the eggs, sugar, brown sugar, vanilla and cinnamon
  • In a separate bowl sift together the flour, baking soda and salt
  • Alternate mixing in the oat mixture and flour mixture to the egg mixture. Once all combine, beat the cake batter for 2 minutes.
  • Pour the batter into a greased 9 x 13 inch pan and bake in a 350ºF oven on a center rack for 30-40 minutes

Coconut Pecan Topping

  • Combine the ingredients of the topping. Spread over the cake immediately after the cake is done baking.
  • Move the oven rack under the broiler and place cake with topping under the broiler for 2-3 minutes, until golden brown.

Notes

  • Either instant oats or regular oats can be used in this recipe
