- Monterey Jack Cheese: perfect cheese flavor addition to this dip, it is mild and smooth when melted

- Cook the Beef and Onions– in a skillet over medium-high heat, brown the ground beef and the onions, until the onions are just tender.
- Prepare the Slow Cooker– add the ground beef and onions to the slow cooker and mix in the taco seasoning, Rotel tomatoes, black beans, Velveeta, Monterey Jack cheese, and evaporated milk.
- Cook the Queso– put the lid on the slow cooker and turn to low. Cook for 2-3 hours, until the cheese is all melted and bubbly.

Slow Cooker Beef Queso Recipe
Ingredients
- 1 pound ground beef
- ½ cup onion diced
- 1 packet taco seasoning
- 2 cans Rotel tomatoes
- 1 can black beans drained and rinsed
- 16 ounce Velveeta cut into cubes
- 1 cup Monterey Jack cheese shredded
- ½ cup evaporated milk
Instructions
- In a skillet over medium-high heat cook the ground beef and onions until the onions are tender.
- Drain off any excess grease and place meat in the slow cooker.
- Add in the taco seasoning, Rotel tomatoes, black beans, Velveeta, Monterey Jack Cheese and evaporated milk.
- Cover and cook on low for 2-4 hours. Stir occasionally to help with even melting and flavor distribution.
- Keep on warm while serving.
