How to make Coconut Banana Bread
This delicious banana bread recipe comes together with basic ingredients you probably already have on hand like; flour, sugar, coconut oil, eggs, cinnamon, nutmeg and baking soda.
The only ingredient you might need to pick up from the store is the coconut cream pudding mix. This is pretty important to this recipe as it adds a ton of flavor, texture and moisture.
To make this banana coconut bread recipe, start by combining the melted coconut oil, mashed bananas, eggs and sugar. Mix in a large mixing bowl until everything is well incorporated.
In a separate bowl whisk together the flour, baking soda, cinnamon, nutmeg, salt and pudding. Whisk until no lumps remain and the spices are blended in.
Add the dry ingredients to the wet ingredients and stir until everything is well combined. Mix in chocolate chips.
Pour the batter into a well greased 9 x 5 inch loaf pan. Bake the bread on the center rack of a 350ºF oven until a toothpick inserted in the center comes out clean.

- 1/2 cup coconut oil, melted and cooled
- 2 bananas, ripe
- 2 eggs
- 1 cup sugar
- 1 1/2 cup flour
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 1 3.4 oz Instant Coconut Cream Pudding
- 1/2 cup chocolate chips
- 1/4 cup sweetened coconut flakes
Instructions
- Preheat oven to 350º F. Grease a 9 x 5 inch baking pan
- In a large mixing bowl or stand mixer combine the melted coconut oil, mashed bananas, eggs and sugar until well combined
- In a separate bowl whisk together the flour, baking soda, cinnamon, nutmeg, salt and pudding mix.
- Combine the dry ingredients with the wet banana mixture until well incorporated.
- Fold in the chocolate chips, reserving a few for the top of the bread.
- Pour the batter into the prepared baking pan. Sprinkle the top with coconut flakes and chocolate chips.
- Bake for 45-55 minutes, until a toothpick inserted in the center comes out clean. Allow to cool before slicing.
