How to Make Brown Butter Smores Skillet Cookie
Make the Brown Butter
- Make the Brown Butter-in a skillet over medium heat, melt the butter and continue to cook and stir for about 5 minutes. The butter will become foamy and then as soon small brown bits appear in the pan, turn off the heat and then continue stirring. Allow the butter to cool for about 10 minutes before making the skillet cookie.
- Make the Cookie Dough– Combine the brown butter with the brown sugar, white sugar, vanilla, and eggs until combined. Add in the flour, salt, baking soda, and baking powder until a soft dough is formed. Lastly, stir in semi-sweet chocolate chips, milk chocolate and crushed graham crackers.
- Spread into the Cast Iron Skillet– spread the cookie dough out evenly into a well seasoned or greased 12 inch cast iron skillet and top with large marshmallows that have been torn in half.
- Bake– Bake the skillet cookie in a 350º F oven for 18-20 minutes. If you want a really gooey center, cook for about 18 minutes.

- 1 cup browned butter cooled
- 3/4 cup brown sugar
- 1/4 cup sugar
- 2 eggs
- 1 1/2 teaspoons vanilla
- 2 cups flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup semi sweet chocolate chips
- 1 cup Hershey's chocolate bar or milk chocolate chip cookies broken into small pieces
- 1 cup graham crackers broken into small pieces
- 8-10 marshmallows torn in half
Instructions
- cool brown butter bake 350 20-25 mins
- Make the brown butter by cooking the butter in a skillet over medium heat for about 5 minutes. Stir frequently. The butter will get foamy and then brown bits will form in the pan, turn off the heat and allow the butter to cool for 10 minutes before making the dough.
- In a large mixing bowl, combine the 1 cup browned butter, 3/4 cup brown sugar, 1/4 cup sugar, 2 eggs and 1 1/2 teaspoons vanilla. Add in the 2 cups flour, 1/2 teaspoon baking soda, 1/2 teaspoon baking powder, and 1/2 teaspoon salt. Mix until a soft dough has formed.
- Mix in the 1 cup semi sweet chocolate chips, 1 cup Hershey's chocolate bar or milk chocolate chip cookies and 1 cup graham crackers.
- Press into a well seasoned or greased 12 inch cast iron skillet. Place the 8-10 marshmallows broken in halves all over the top of the cookie dough.
- Bake in 350º F oven for 18-20 minutes until the edges are golden brown and the center is soft.
- Serve while still warm.
