Baked Cranberry Chicken

Who doesn’t love a simple recipe for juicy, delicious chicken? This recipe for cranberry chicken has just 4 ingredients, is easy to put together and cooks up so tender and flavorful every time.

I love that this is all put together and baked in one pan, making cooking and clean up a breeze. Like all my chicken recipes, this one is a for sure fam favorite. This is also perfect for a holiday meal that everyone leaves asking for the recipe.

Making Cranberry Chicken

This cranberry chicken recipe is such an easy weeknight dinner that you will come back to over and over.

To make cranberry chicken, start by mixing together the whole cranberry sauce, Catalina dressing and packet of dry onion soup mix.

I like to just whisk it all together in a mixing bowl until it is well combined.

Then, pour it over the chicken breasts in a 9 x 13 inch baking dish. Cover the pan with foil and bake for 45 minutes, remove the foil and bake for an additional 15 minutes to allow the sauce to thicken.

How to know When Chicken is Done

If you want to cook perfectly, juicy chicken every time, my biggest tip is to invest in an instant read thermometer. I use a Thermopen to measure temperatures in my kitchen.

Chicken breast should be cooked to 165º F. If you don’t own a thermometer, make sure the chicken is no longer pink inside before serving.

What to Serve with Cranberry Chicken

The cranberry sauce that the chicken is baked in is both sweet and savory, full of so many delicious flavors.

This chicken is perfect served over white/wild rice, over egg noodles or your favorite pasta.

Some of our favorite side dishes to eat with this are garlic parmesan green beans, roast broccoli or oven roasted brussel sprouts.

How to Store Catalina Cranberry Chicken

If you have leftovers of cranberry chicken, place into an air tight container and refrigerate for up to 3 days.

This chicken recipe can be frozen for up to 3 months in an air tight container. Bake covered with foil for up to 45 minutes at 350º F.

Ingredients

  • 3 pounds chicken breast
  • salt and pepper
  • 1 can whole berry cranberry sauce
  • 1 bottle catalina dressing
  • 1 package onion soup mix

Instructions

  • Preheat oven to 350 ℉.
  • Combine cranberry sauce, dressing and onion soup mix in a bowl.
  • Season the chicken breasts on both sides with salt and pepper
  • Place chicken breasts into 9 x 13 inch pan. Pour cranberry mixture over the chicken breasts.
  • Cover the pan with foil, bake for 45 minutes, remove the foil, flip chicken and bake for additional 15 minutes until internal temperatures reach 165°.
  • Serve over egg noodles or rice.

Notes

  • chicken thighs can be used in this recipe as well, cook to an internal temperature of 170º F
