Easy Chicken Tetrazzini

We are always testing out quick and easy recipes that we can mix in to the weekly meal rotation and this easy chicken tetrazzini recipe fit perfectly. This recipe is creamy, dreamy and will fill the fam up with so many comforting flavors.

The cook is going to love this easy one pan meal recipe too because it takes just a few ingredients to make and comes together quick. Plus, one pan equals less dishes to wash at the end of the meal!

Making a meal in under 20 minutes feels like a major kitchen win! We love this recipe because it is so flavorful, warm and comforting and totally filling, just like this recipe for one pan sausage and gnocchi.

How to make Cheesy Chicken Tetrazzini

To start, make sure you have a big enough pan to hold all of this deliciousness. I like to use a 12 inch enameled cast iron pan because it is big and can go from the stovetop right to the oven.

It’s okay if you don’t have a pan that will go into the oven, the cheese will just get nice and melty on top without getting toasted. It will still be delicious.

  • First, melt the butter in the pan and add in the mushrooms, onions and seasonings, cook for 5-6 minutes
  • Next, pour in the chicken broth and heavy cream and give it a quick stir to combine

  • Add the broken pasta and the shredded chicken to the pan, bring the liquid to a boil over medium high heat. Cover the pan and cook for 8-10 minutes, stirring occasionally until the pasta is tender and the sauce has thickened.

  • Once the pasta is soft and the sauce has thickened, turn off the heat and stir in 1 1/2 cups of the mozzarella cheese.
  • Sprinkle the remaining mozzarella and parmesan cheeses over the top of the pan, then place it under the broiler for 2-3 minutes until the cheese is melted and bubbly. YUM!!

Chicken Tetrazzini Recipe

Ingredients

  • 8 ounces angel hair pasta or thin spaghetti broken into smaller pieces
  • 1/2 cup butter
  • 16 ounces white mushrooms sliced
  • 1/2 yellow onion diced
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 2 teaspoons dried parsley
  • 1/2 teaspoon black pepper
  • 1 teaspoon sea salt or to taste
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 2-3 cups shredded chicken
  • 2 cups mozzarella cheese shredded
  • 1/4 cup parmesan cheese shredded

Instructions

  • In a large, oven safe skillet over medium high heat, melt the butter and add in the mushrooms and onion.
  • Add in the onion powder, garlic powder, parsley, sea salt and black pepper cook and stir until browned and tender 5-6 minutes.
  • Pour in the chicken broth and heavy cream, stir to combine
  • Add the chicken and broken pasta to the pan, bring to a boil and cook over medium heat until the pasta is tender, stirring occasionally. About 8-10 minutes.
  • Remove from the heat and stir in 1 1/2 cups of mozzarella cheese.
  • Sprinkle the remaining mozzarella and parmesan cheese over the dish and place under the broiler for 2-3 minutes until the cheese is melted and golden brown.
  • Add fresh parsley to the top if desired.
