How to make Cheesy Chicken Tetrazzini
To start, make sure you have a big enough pan to hold all of this deliciousness. I like to use a 12 inch enameled cast iron pan because it is big and can go from the stovetop right to the oven.
It’s okay if you don’t have a pan that will go into the oven, the cheese will just get nice and melty on top without getting toasted. It will still be delicious.
- First, melt the butter in the pan and add in the mushrooms, onions and seasonings, cook for 5-6 minutes
- Next, pour in the chicken broth and heavy cream and give it a quick stir to combine
- Add the broken pasta and the shredded chicken to the pan, bring the liquid to a boil over medium high heat. Cover the pan and cook for 8-10 minutes, stirring occasionally until the pasta is tender and the sauce has thickened.
Use shredded rotisserie chicken or make your own shredded chicken by boiling chicken breasts in salted water for 20-25 minutes, then shred.
- Once the pasta is soft and the sauce has thickened, turn off the heat and stir in 1 1/2 cups of the mozzarella cheese.
- Sprinkle the remaining mozzarella and parmesan cheeses over the top of the pan, then place it under the broiler for 2-3 minutes until the cheese is melted and bubbly. YUM!!
