Why I Recommend Cooking in a Cast Iron Skillet
- I love using my cast iron skillet to make a quick dinner, the perfect steak as well as for baking everything like a Giant Cinnamon Roll Cake.
- Cast iron is known for even heat distribution which makes a perfect outer crust on this dutch baby pancake recipe.
- Cast iron also has a non-stick surface that helps the pancake release easily and makes clean up a breeze! Who doesn’t love that?!
Ingredients Needed for This Recipe
- butter– fresh, unsalted butter is what I recommend for this recipe
- eggs– large, fresh eggs
- flour– all purpose flour is the preferred flour for this recipe
- milk– from whole milk to skim, any will work
- brown sugar– add a little more flavor than white sugar to this recipe
- spices– cinnamon and nutmeg add a warm, Fall-like flavor to this apple dutch baby pancake.
- apples– fresh, crisp apples work best
How to Make Easy German Apple Pancakes
- Preheat the oven and melt the butter– heat your oven to 400º F. Place a 12-inch cast iron skillet (or 9 x 13 inch baking dish) inside the oven with the butter while the oven heats up. Once the butter is melted and bubbly, remove the pan from the oven.
- Make the batter– In a blender, combine together the eggs, milk, flour, salt, brown sugar, vanilla, and spices. Blend until the mixture is well combined and bubbly, about 1 minute.
- Bake– pour the prepared batter into the heated cast iron skillet. Arrange apples on top of the pancake batter and bake for 20-25 minutes, until puffed up and golden brown. Don’t worry if the pancake rises up in peaks, that’s what makes a Dutch Baby Pancake so fun!
How to Make Caramel Sauce for German Apple Pancakes
While the German Apple Pancake is baking in the oven prepare the Caramel Sauce to drizzle over the top or serve with the pancakes when they are ready to serve.
- Melt the butter-In a sauce pan over medium heat, melt the butter. Add in the heavy cream and brown sugar, stir until the sugar has dissolved.
- Make the caramel-Bring to a boil and simmer for 5 minutes, stirring constantly. The mixture will change color and begin to thicken as it cooks. Remove from the heat and add in the vanilla, stir to combine.

Recipe FAQs
Use fresh crisp apples like; Gala, Pink Lady, Fuji, or Granny Smith. I don’t recommend Red Delicious, they tend to get mushy when baked.
These are best made at the time you will be serving them, they tend to get soggy if prepared in advance.
Serve this Dutch baby pancake with warmed maple syrup, caramel syrup and a dollop of whipped cream.
Storage and Leftovers
If you have any Dutch baby pancake leftover, place into an air tight container and store in the refrigerator for up to 2 days.
Reheat individual serving sizes in the microwave for 30 seconds before serving.
