How to Make Tomato Soup

This Easy Tomato Soup is so easy to make and is ready in less than 10 minutes!

Start by placing a large pot over medium heat. Add olive oil and diced onions and garlic, cook and stir for 2-3 minutes until the onion is soft and the garlic is fragrant. Season with salt and pepper.

Pour in the cans of diced tomatoes, tomato sauce and chicken broth.

Using an immersion blender, blend the soup until it is smooth. If you do not own and immersion blender, you can blend the soup in a blender. If all of the soup can fit into your blender, blend it until smooth, leaving the spout open to allow any steam to be released from the blender.  Blend in batches if it cannot all fit in the blender, still allowing any steam to release from the blender.

Bring the soup to a boil over medium heat, stirring frequently. Remove the pot from the heat and stir in the cream and fresh basil. Stir until mixed together.

Serve immediately. This soup can be made ahead and kept warm on low in a slow cooker or over the stove on low. If you are keeping this over the stove, just keep an eye on it, you don’t want it to boil or the cream can separate.

Storing Leftover Tomato Soup

If you have soup leftover, this soup can be frozen or kept in the refrigerator.

To freeze, place cooled soup in an air tight container or zip top bag. Freeze for up to 3 months. To reheat, place in the microwave or on a pot over medium heat, stirring frequently.

To store in the refrigerator, place in an air tight container for up to 4 days.
