This Ginger Cream Cookie Recipe should not just be a Holiday cookie (in my opinion) because they are just so good, you are going to want to make these all year round. Just baking this cookie dough somehow makes your whole house feel more warm and so inviting.

How to make Ginger Cream Cookies

To make these simple, melt in your mouth Ginger Cookies start by creaming together the butter and sugar in a mixing bowl with an electric mixer or in the bowl of a stand mixer. Add in the egg and molasses and mix until smooth.

In a separate bowl sift together the flour, baking soda, salt, ginger, cloves and cinnamon. Alternate adding and mixing in the dry ingredients and the water.

Mix until a soft dough is formed and all the ingredients are well incorporated. Scoop the dough onto a greased baking sheet with a scoop or two spoons, placing 1-2 inches apart.

Bake in a 400º F oven for 8-10 minutes until browned and cooked through. Cool on a cooling rack until cool enough to frost. Frost with buttercream frosting (if desired, this is optional, but delicious)

Ingredients

  • 1/4 cup butter, softened
  • 1/2 cup sugar
  • 1 egg
  • 1/3 cup molasses
  • 2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ginger
  • 1/4 tsp ground cloves
  • 1/2 tsp ground cinnamon
  • 1/3 cup water

Instructions

  • Preheat oven to 400º F
  • Cream together butter and sugar. Add in eggs and molasses, mix until combined.
  • Sift together flour, baking soda, salt, ginger, cloves and cinnamon into the creamed butter and mix.
  • Slowly add water while mixing until combined and a soft dough is formed
  • Drop by teaspoonfuls 2 inches apart on a parchment lined or greased baking sheet.
  • Bake for 8-10 minutes. Dip into melted white chocolate or frost with cream cheese frosting.

Recipe for BUTTERCREAM FROSTING
If the dough is too soft to scoop, place covered in the refrigerator for about 15 minutes before scooping.
